Bacon Wrapped Pork Tenderloin Recipe – very easy, with a coat of crispy bacon on the outside, the perfect seasoning, flavorful, juicy meat, this recipe is quick to make and perfect for lunch or dinner.

Bacon wrapped pork tenderloin

Keto friendly, quick and easy to make, tender and flavorful this pork recipe is a must try!

You first season the meat with salt and pepper (I also used some paprika), then sear it on the stove top in a cast iron pan.

Line bacon on a cutting board, so the slices slightly overlap, then wrap the pork tenderloin in it.

Roast at 400 F for 22-25 minutes, depending on the size of the meat, type of baking sheet and oven used. Then internal temperature if the meat right out of the oven should be between 150 F and 165 F.

Make sure you follow the directions and don’t burn or overcook the meat.

Use any leftovers for sandwiches, salads, pasta salads or grain bowls.

Ingredients:

Here is what you need to prepare this bacon wrapped pork tenderloin:

  • pork tenderloin (medium piece), around 1 lb
  • salt and pepper
  • paprika (optional)
  • olive or vegetable oil
  • honey
  • balsamic vinegar

Directions:

Preheat oven to 400 F/(200 C).

Lay the bacon on a cutting board or the kitchen counter, slightly overlapping, making sure the length is similar to the length of the pork tenderloin.

Season pork tenderloin with salt, pepper and paprika.

On the side, where the fillet is thinner, tuck the thin end under, so the piece of meat has the same thickness.

Heat 2 tbsp of oil in a skillet on the stove top over medium-high heat and cook the pork tenderloin for 4 minutes on both sides.

Place the meat on the bacon and roll so the bacon wraps around the meat. 

Place on a baking sheet, lined with aluminum foil, make sure the side where bacon overlaps is down.

In a bowl mix together the olive oil, honey and balsamic vinegar.

Brush the mixture over the bacon.

Bake the bacon wrapper pork tenderloin for 22-25 minutes, or until the internal temperature of the meat is 150F (65 C).

Rest the meat for 5-10 minutes. Cut and serve.

Should you cover the meat, while roasting?

If you see the top browning too quickly, use a piece of foil to cover the meat while roasting.

What bacon to use?

I prefer thinly sliced strips of bacon, that are long enough to wrap the meat. You can use smoked bacon.

How long to bake in the oven for and at what temperature?

After you sear the meat and wrap it in bacon, place on a baking sheet and cook at 400 F for 20-25 minutes, until the internal temperature of the meat is 145-150 F.

Bake pork tenderloin in the oven UNCOVERED for approximately 20-25 MINUTES PER POUND.
 
Pork tenderloin internal temperature: Cooking Whole Cuts of Pork: USDA has lowered the recommended safe cooking temperature for whole cuts of pork from 160 ºF to 145 ºF with the addition of a three-minute rest time.

Can you grill it?

The short answer is – yes. You can try grilling it, but you have to take an extra step.

While when baking the pork tenderloin, you are going to make sure that the bacon overlap is on the bottom, when you put in on the hot grill, the bacon might move, separate or stick to the grill in some cases.

I suggest that you secure the bacon with toothpicks, so it stays wrapped around the pork.

There is no need to pinch the meat, just stick the toothpicks so secure the bacon slices.

You can also use a frill pan, so the meat is not placed directly on the grill and the bacon doesn’t burn, while you are trying to cook the meat.

Grill over medium heat on a gas grill for 25 minutes, until the temperature of the meat is between 150 and 160 F.

Tips:

  1. If there is a thin membrane on the meat (silver skin), make sure you remove it before cooking. Use a small sharp knife to separate it from the meat and then pull it out.
  2. You can cook the meat to pink center of further, it is up to you. Cook to a minimum internal temperature of 150 F or up to 165 F.
  3. Season the meat with your favorite dry rub for more flavor. Make sure the meat is at room temperature prior to cooking.
  4. You can make ahead this bacon wrapped pork tenderloin: Season the meat, cook in a pan, then wrap in bacon. Wrap with plastic wrap and refrigerate. When ready to use, bring to room temperature, then roast in the oven.

  • 8-10 slices bacon
