What is pork tenderloin and what is the best way to cook it?

Don’t mistake pork tenderloin for pork loin, as they are two completely different cuts of meat. Pork tenderloin is a thin, small long, thin cut of pork.

Source Wikipedia:

As with all quadrupeds, the tenderloin refers to the psoas major muscle along the central spine portion, ventral to the lumbar vertebrae. This is the most tender part of the animal, because these muscles are used for posture, rather than locomotion.

Pork loin and pork tenderloin are not cut from the same part of the animal, and in fact, look really different — pork tenderloin is thin and small, while a pork loin is wide enough that you can cut steak-like pieces from it.

Pork tenderloin is usually pretty small (1 1/2 to 2 1/2 pounds) and cooks pretty fast.

It can be baked, grilled, seared, smoked, slow cooker or pressure cooked.

What is the safe temperature to cook pork tenderloin to?

Cook pork tenderloin to a safe internal temperature of 145 F for medium.

You can cook it to 165 F (I prefer this ) for medium well.

We cook pork tenderloin often in my house, because I try to eat low-carb and this cut of meat is a great option for my lifestyle. The result – you can easily get bored with cooking the same cut of meat with the same seasoning, following the same recipe over and over again.

So to spice things up, I cut through the pork tenderloin, stuffed it with mushrooms, bacon, cream cheese and spinach, rolled it into a roll and seared on the stove top. Then finished cooking in the oven, until it reaches a safe temperature. Fancy looking, but easy to make meal.
