This is by far my favorite way to cook pork tenderloin. It involves searing the seasoned meat on the stove top and then finishing cooking it in the oven, until cooked to 145 F (the USDA safe recommended temperature for pork tenderloin).

What is pork tenderloin and what is the best way to cook it?

Don’t mistake pork tenderloin for pork loin, as they are two completely different cuts of meat. Pork tenderloin is a thin, small long, thin cut of pork.

As with all quadrupeds, the tenderloin refers to the psoas major muscle along the central spine portion, ventral to the lumbar vertebrae. This is the most tender part of the animal, because these muscles are used for posture, rather than locomotion.

Pork loin and pork tenderloin are not cut from the same part of the animal, and in fact, look really different — pork tenderloin is thin and small, while a pork loin is wide enough that you can cut steak-like pieces from it.

Pork tenderloin is usually pretty small (1 1/2 to 2 1/2 pounds) and cooks pretty fast.

It can be baked, grilled, seared, smoked, slow cooker or pressure cooked.

What is the safe temperature to cook pork tenderloin to?

Cook pork tenderloin to a safe internal temperature of 145 F for medium.

You can cook it to 165 F (I prefer this ) for medium well.

This Oven Baked Pork Tenderloin recipe is a sheet pan (one pan ) deal, that does not require a lot of dishes getting dirty and you can cook your side dish at the same time on the same pan.

I usually make it with Brussel Sprouts, but potatoes, carrots or green beans could be also used.

You season (or marinate ) the pork, then bake at high temperature – 450 F in the oven, until it reaches 145 F internal temperature. You can bake the vegetables together with the pork, but keep in mind that they might require more or less time to cook.

Grilled Pork Tenderloin

Grilled Pork Tenderloin

Ingredients 

  • 1 pork tenderloin — 1 lb
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cloves garlic — minced
  • 1 onion — sliced
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp lemon juice
  • 1/4 cup olive oil

Instructions 

  • Place all ingredients in a zip lock bag. Add the trimmed pork tenderloin. Seal and marinade in the fridge for between 30 minutes to 6 hours.
Preheat a gas grill for medium high heat. Glean and grease the grates.
Remove pork from the marinade and carefully dry with paper towel.
Grill for 15-25 minutes, flipping a few times, until golden and crispy on the outside and thermometer inserted reads 140 F for medium rare. Let it rest for 10 minutes, before slicing
  • The marinade will be enough for 2 one pound pork tenderloins, if you'd like to make more.
