After sharing my Chocolate Cottage Cheese Mousse, I got some requests to make a lemon cottage mousse and here it is.
All you need to do is blend cottage cheese with sweetener, milk (unless you like your mousse super thick) and lemon zest.
How to make Cottage Cheese Mousse with lemon flavor:
Ingredients:
- Cottage Cheese
- Milk, cream or water – to thin the mousse and help make it light and smooth.
- Lemon – juice and zest
- Sweetener – optional
- Vanilla Extract
- Berries for garnishing
Directions:
- Get all ingredients ready.
- If you have a food processor, it works better than a blender, because the amount of ingredients is small and may not blend easily. Even though you can add all ingredients at the same time, I suggest that you leave the milk out, blend the rest of the ingredients and then thin the mixture with milk.
- Pour into a cup, garnish with berries and mint.
- Store in the fridge for up to 2 days.
Recipe Tips/FAQs:
- Why make a dessert with cottage cheese? – Why is this a good idea? Can’t you just use cream cheese instead? Cottage cheese is high in protein, which can help keep you fuller for longer. Compared to traditional mousse ingredients like heavy cream, this cottage cheese mousse is an alternative with less fat and calories. For people like me, who are looking to consume more protein from calories, this is a great option!
- Should you use a blender or a food processor ? The answer here is “It depends.” It really depends on the amount of protein mousse you are making and the type of food processor or blender you have. Some blenders are not appropriate for blending thicker mousses like this one, they just work for smoothies and soups. Most food processors are a better option here, but I suggest that you use your proper judgement to decide what works best for you.
- Flavoring – the lemon zest and juice combination adds the perfect flavor, but you can also add some vanilla extract or even berries to create a blueberry lemon cottage mousse for example.
- Can you make this dessert in advance? – Yes, it can be made up to 2 days in advance. Since it only requires just 5 minutes to whip up, there is no need to make it in advance.
