What is a salmon steak (cutlet)?

Unlike the popular boneless salmon fillets, a salmon steak is a type of fish cutlet. Fish fillets are cut parallel to either side of the spine and do not include the larger bones.

This particular piece is cut perpendicular to the fish spine, resulting in it having more bones than a fillet. (This stake can have the bones removed, post cutting).

Fish steaks (salmon) usually have the skin on and ave very flavorful when cooked and taste super delicious.

Generally larger fish (4-5 kg) is used to make salmon steaks.
