Marinated Tomato Burrata Salad Recipe – crunchy colorful tomatoes, covered in a fresh and tangy marinade, served with a rich and creamy Burrata ball and sliced crusty bread.

This recipe is a spin on the Classic Burrata and Tomato Salad Recipe.

Why marinate tomatoes?

Marinating tomatoes is a culinary technique that enhances their flavor and texture, making them more vibrant and tasty in a variety of dishes.

The marinade, which is a mixture of olive oil, vinegar, Balsamic, onions, herbs, and spices, is absorbed by the tomatoes, which loads them with additional flavors that complement their taste. The herbs and spices also add additional complementing flavors to the tomatoes.

Marinated tomatoes make a great dish on their own, especially when paired with different cheeses, Burrata and crusty bread or crackers.

Marinating is a great way to make the most of tomato season, especially when you have a lot of fresh tomatoes.

Burrata Cheese

This is one of my favorite types of cheese.

Burrata is a fresh Italian cheese with unique taste and texture.

It resembles a pouch made of mozzarella, filled with a creamy mixture of curds and fresh cream.

“Burrata starts out much like mozzarella and many other cheeses, with rennet used to curdle the warm milk. Unlike other cheeses, however, the fresh mozzarella curds are plunged into hot whey or lightly salted water, kneaded, and pulled to develop stretchy strings, then shaped.

When making burrata, the still-hot cheese is formed into a pouch, which is then filled with the scraps of leftover mozzarella and topped off with fresh cream before closing.

 The finished burrata is traditionally wrapped in the leaves of asphodel, tied to form a brioche-like topknot, and moistened with whey.”

The outer shell is smooth and elastic, while the inside is rich, oozing with cream when you cut it open. Burrata has rich and buttery, fresh taste.

It could make the perfect addition to salad, pasta or pizza.

High in fats, protein and around 250 calories per 100 grams of it.

How To Make Marinated Tomato Burrata Salad

Ingredients for marinated tomato salad with Burrata cheese:

  • Small tomatoes, such as grape or cherry variety
  • salt
  • black pepper
  • dried oregano
  • apple cider vinegar
  • balsamic vinegar
  • olive oil
  • red onion or shallot
  • good quality Burrata cheese
  • fresh basil leaves – chopped for the dressing and whole for garnishing

Directions:

To make the marinade:

Mix the olive oil, apple cider vinegar, balsamic vinegar, salt, pepper, oregano, fresh basil and onion in a bowl.

Toss the tomatoes into the dressing. Let them marinate for 10-30 minutes.

Add a ball of burrata in the middle. Serve with crackers or toasted bread.

Store leftovers in the fridge for up to 1 day.

Recipe tips:

  1. This tip applies to any salad recipe, but I’m going to mention it again: Make sure you choose fresh ingredients for best result. While I used small tomatoes in different colors, you can feel free to use Heirloom tomatoes or any ripe, flavorful tomatoes you have access to.
  2. Marinating the tomatoes – I used simple pantry staples like olive oil, apple cider vinegar for some extra acidity, Balsamic vinegar, salt, pepper, oregano and shallot, you can feel free to add minced garlic, fresh basil, other herbs of your choice or even hot pepper flakes.
  3. Be careful how you handle the Burrata, because you may pinch the ball and damage it.
  4. What to serve with? My top choice freshly toasted crusty bread, but you can also serve it with other veggies (like peppers or zucchini), pizza, flatbread or breadsticks.
  5. Extra toppings: for additional texture and flavor, you may consider adding nuts (pine nuts or almonds), prosciutto, olives, capers or hot peppers. There already is fresh basil in the recipe, but if you are a fan of the flavor, adding some pesto could be a great idea.

Burrata Tomato Salad

Marinated small tomatoes in different colors, fresh and flavorful dressing, basil leaves and creamy Burrata, served with crusty toasted baguette.

Ingredients 

  • 3 cups grape or cherry tomatoes, cut in half or into quarters
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp oregano
  • 2 tsp apple cider vinegar
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 small red onion, diced
  • 6 oz 90 grams Burrata cheese
  • Fresh basil leaves – t tbsp freshly chopped + more for garnishing

Instructions 

  • Mix the olive oil, apple cider vinegar, balsamic vinegar, salt, pepper, oregano, fresh basil and onion in a bowl.
  • Toss the tomatoes into the dressing. Let them marinate for 10-30 minutes.
  • Add a ball of burrata in the middle. Serve with crackers or toasted bread.
