Burrata Tomato Salad

Marinated small tomatoes in different colors, fresh and flavorful dressing, basil leaves and creamy Burrata, served with crusty toasted baguette.

Ingredients

  • 3 cups grape or cherry tomatoes cut in half or into quarters
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp oregano
  • 2 tsp apple cider vinegar
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 small red onion diced
  • 6 oz 90 grams Burrata cheese
  • Fresh basil leaves - t tbsp freshly chopped + more for garnishing

Instructions

  • Mix the olive oil, apple cider vinegar, balsamic vinegar, salt, pepper, oregano, fresh basil and onion in a bowl.
  • Toss the tomatoes into the dressing. Let them marinate for 10-30 minutes.
  • Add a ball of burrata in the middle. Serve with crackers or toasted bread.
