Baked Pork Chops With Apples – easy to make, light, flavorful and delicious meal, perfect for fall and winter.

Pork with apples anyone? Yes these two go well together, especially if you are a fan of the sweet and savory combination.

This one pan meal is great for a weekday lunch or dinner. Tender, perfectly cooked bone in pork chops, cooked together with apples and onions. Serve with mashed potatoes, roasted veggies or homemade Dutch Oven Bread.

This is a popular recipe and I’m sharing just the way I make Pork with Apples. There are different representations of it – for example using pork tenderloin instead of pork chops, make it in a slow cooker or pressure cooker.

How to make Baked Pork Chops With Apples?

This recipe starts off on the stove top and then finishes cooking in the oven.

The meat is fully cooked, and submerged in sauce. When cooking pork with sauces and other vegetables, I usually prefer using pork shoulder steaks, instead of pork chops (cutlets). They generally have more fat and are “marbled”, so it is not that easy to over cook. Pork shoulder steaks (pork blade steaks) also have more flavor compared to pork chops and are perfect for slow cooking and to be cooked together with other vegetables.

What kind of pork chops to use?

I used bone-in pork shoulder steaks for this Baked Pork Chops With Apples recipe. You can find them pre-packaged at your local grocery store. They are usually around 1 lb each and 3/4-inch thick. If you can not find them at the store, check out a butcher near you. They may have them pre-cut or might be willing to cut some for you.

Boneless or bone-in pork chops will work in the recipe as well. They may take less time to cook, compared to pork shoulder steaks.

Onions

Any type of onion works in the recipe. I used red onions, but white or yellow will work, too.

Herbs  and Seasoning

Pork chops are seasoned with salt and pepper.

Additional seasonings (optional)  – thyme and rosemary. Whole grain mustard also goes well with pork. Other seasoning options – fresh sage.

Garnishing – fresh thyme, parsley or cilantro.

Cooking Method:

After seasoning the meat, you sear it on the stove top in a cast iron skillet for 3-5 minutes per side (2-3 minutes, if using thinner chops) to lock in the meat juices and make them golden on the outside.

Remove from the pan and add the apples and onions.

Cook for 3 minutes.

Pour the chicken stock and add the mustard to the pan.

Season with thyme, rosemary, more salt and pepper.

Add the pork chops back to the pan.

Preheat your oven to 400 F.

Cook pork chops to the oven and bake for 10-12 minutes.

The internal temperature of the meat should be 165 F  (74 C).

Take out of the oven and serve.

Pork With Apples (Stove Top)

Ingredients 

  • 2 medium Apples
  • 1 small onion, I used red onion
  • 3-4 pork steaks, bone in pork shoulder steaks, about 4 oz each
  • Salt and pepper to taste, 1/2 tsp salt and 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2/3 cup chicken stock
  • 1 tbsp Whole Grain Dijon Mustard, regular Dijon can be used
  • 1/4 tsp thyme
  • 1/4 tsp rosemary, optional
  • 1/4 tsp or more salt
  • 1/4 tsp black pepper

Instructions 

  • Season both sides of the pork steaks with salt and pepper.
  • Heat a cast iron skillet over medium-high heat. Add 1 tbsp oil.
  • Cook the pork steaks for 3-5 minutes per side, turning once.
  • Remove and transfer to a plate.
  • Add the apples and onions to the pan. Cook for 3-4 minutes, stirring occasionally.
  • Pour the chicken stock and add the mustard to the pan.
  • Season with thyme, rosemary, more salt and pepper.
  • Add the pork chops back to the pan.
  • Preheat your oven to 400 F.
  • Add the pork chops to the oven and bake for 10-12 minutes.
  • Take out of the oven and serve.

Notes

Fresh herbs like parsley, cilantro, sage or rosemary for serving.
