Roasted Carrots and Radishes With Summer Savory

You might not have noticed, but I love side dishes! And I like to experiment and always think of new side dish ideas.

Today’s recipe is for roasted carrots and radishes. But don’t run away, if you are not a fan of radishes and absolutely refuse to try them roasted, you can just try these roasted carrots. They are sweet, flavorful and very tasty.

Roasting brings a lot sweetness to the carrots, makes them soft and tender.

Roasted Carrots

Radishes have always been a little under appreciated.

I use them is some salads, but rarely roast them. And a lot of people around me just don’t like radishes and just don’t eat them in salads… When roasting radishes, they might taste a little bitter, which I don’t mind. I decided to roast these two root vegetables together and this resulted in a great balance of flavors – slightly bitter radishes and sweet carrots.

The real winner in this recipe is a herb, I used to season them. It is called summer savory and it is very popular in Bulgaria. Of course you can find it in the US, or get it online. It is a staple in many Bulgarian recipes and I just can’t believe I haven’t shared my love for it on the blog yet.

Summer Savory (Satureja hortensis, netive to Southeastern Europe) is used to season grilled meat, veggies, sauces and soups. You can either use it fresh or dry. It is also used as a characteristic ingredient of Herbs De Provence. It could provide strong, pungent flavor to many dishes and to me tastes like a mix of thyme, oregano and marjoram. It is just hard to describe it, because I’ve used it since I can remember and to me it just tasted like “summer savory”…

I know this is a lot of information to some of you, but I just wanted to share my love for it. Summer savory is also known as “chubritsa” in Bulgaria, an I was vary happy to find out that there is a spice blend, sold on Amazon, called “chubritsa”. It has summer savory listed as an ingredient and I’m very excited to try it. It should be the perfect seasoning for bread, potatoes and salads.

Mix summer savory with some salt and pepper and it will turn into a great, simple seasoning. This is what I used for the carrots and radishes in the recipe.


Just toss carrots and radishes in olive oil and season with salt, pepper and summer savory (you can use Herbs De Provence or a mix of thyme, oregano or marjoram, or even try that “chubritsa” seasoning). Then roast at 400 F for 30 minutes. Drizzle some lemon juice right before serving and top with crumbled feta (optional). It is a great side dish, ready in under 40 minutes.

Roasted Carrots And Radishes

  • 1 bunch carrots, (6-8 carrots), tops trimmed to 1 inch
  • 1 bunch radishes, (12-14 radishes) tops trimmed
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp summer savory seasoning
  • 3 tbsp olive oil
  • 3 tbsp crumbled feta cheese
  • chopped parsley or chopped carrot top leaves for garnishing
  • 1/2 lemon for serving


  • Preheat oven to 400 F. Line a baking sheet with parchment paper (optional).
  • Place carrots and radishes in a single layer. Drizzle with olive oil. Season with salt, pepper and summer savory. Bake for 30 minutes, until tender.
  • Serve immediately, with some lemon juice and feta cheese.
