- 1 bunch carrots (6-8 carrots), tops trimmed to 1 inch
- 1 bunch radishes (12-14 radishes) tops trimmed
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tsp summer savory seasoning
- 3 tbsp olive oil
- 3 tbsp crumbled feta cheese
- chopped parsley or chopped carrot top leaves for garnishing
- 1/2 lemon for serving
Preheat oven to 400 F. Line a baking sheet with parchment paper (optional).
Place carrots and radishes in a single layer. Drizzle with olive oil. Season with salt, pepper and summer savory. Bake for 30 minutes, until tender.
Serve immediately, with some lemon juice and feta cheese.
