What is Barbacoa Beef?

This is not an authentic Barbacoa recipe, but it is the way I make it, with ingredients, that are easy to find. It requires minimal prep work, just add the seasoning and let the slow cooker do the work. All you need to do is shred the beed and sear it (optional). Then serve on a rice bowl, burritos or tacos.

This Easy Barbacoa Recipe Slow Cooker is perfect for meal planning. Just make it on the weekend and you can have your lunch ready during the week.

Traditional barbacoa could be made with sheep, beef, parts of the cattle like the head and cheeks, goat or even pork meat. The dish is popular in many latin countries and the Caribbean.

Chipotle’s:

Contemporary recipes, that copycat Chipotle’s Barbacoa Beef recipe call for beef chuck roast or brisket, meats that have some fat content.

Chipotle’s barbacoa beef is my favorite. This slow cooker Barbacoa recipe, that I’m sharing with you today tastes just as good!

Made with chuck roast beef and a spicy, flavorful adobo sauce, this is so simple to put together and melts in your mouth.

So how do you make Barbacoa Beef?

To make Barbacoa Beef, you can use a slow cooker, pressure cooker or slowly braise it in a Dutch oven  (or another pot) for hours.

I’ve only tried the slow cooker method and it works great for me. This is what makes the beef very tender – slow cooking.

Since this is not an authentic recipe, the easiest way to make Barbacoa at home is to use beef brisket of beef chuck roast.

What seasoning to use for Barbacoa?

For the seasoning I use salt and pepper, cumin, oregano, garlic, onion, stock (vegetable or beef), bay leaf and Chipotle Peppers in Adobo Sauce ( I used LA MORENA®).

Easy Barbacoa Recipe Slow Cooker

Easy Barbacoa Recipe Slow Cooker - tender slow cooked beef, easy to make, less expensive and tastier than the one I've had at a popular restaurant.

Total: 7 hours 10 minutes
Servings: 10

Ingredients 

  • 3 lb beef chuck roast or brisket
  • 1/4 cup lime juice, or lemon juice
  • 3 cloves garlic, minced
  • 1 onion, small, quartered
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 bay leaves
  • 2 tbsp Chipotle chilis in adobo sauce
  • 1 cup broth, chicken, vegetable or beef

Instructions 

  • Cut beef into 2x2 inch pieces. Season with salt, pepper, cumin and oregano. Place in a slow cooker.
  • Add lime juice, Bay leaves, chipotle chilis in adobo and broth.  Add garlic and onion. Cook on high for 6-7 hours, until tender.
  • Remove meat and transfer to a cutting board. Shred with 2 forks.
  • Strain the cooking liquid and reserve all or some of it foe serving.
  • Return meat to the pot and keep it warm.
  • Optional: To crisp up the meat, before you serve it, you can heat 2 tbsp oil on a skillet and lightly brown it for 2 minutes per side, turning once).
