Nothing says summer like a huge bowl of blackberry spinach salad.

I love fresh berries and while strawberries are my all time favorite, I always buy fresh blackberries. While they are great to snack on, I also often use them in salads. Their firm texture and tart taste are perfect for sweet and savory salads. They are loaded with vitamin C, fiber and low in calories.
Whenever I make a salad with berries, like this blackberry spinach salad, I like to serve it with white balsamic vinaigrette. It is a great dressing for light summer salads. All you need is some good white balsamic vinegar and staples like honey, Dijon mustard, salt, pepper and oil.
This blackberr salad is crisp and fresh, with the perfect balance of sweet and savory. And yes, you can definitely add some chicken to turn this salad into a nutritious and filling meal.

BLACKBERRY SPINACH SALAD WITH LIGHT BALSAMIC VINAIGRETTE
Ingredients
For the salad:
- 4 cups baby spinach
- 1 cup blackberries
- 1 avocado, , chopped
- 2 tbsp crumbled feta cheese
- 1 small yellow bell pepper, , diced
- 2 Persian cucumbers, , sliced
- 1/4 cup toasted walnuts, (can use candies walnuts)
For the dressing:
- 1/4 cup olive oil
- 3 tbsp light balsamic vinegar
- 2 tsp honey
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- For the dressing:
- In a small bowl combine all ingredients and stir together.
- For the salad:
- In a deep bowl, combine spinach, peppers, cucumbers, blackberries and walnuts. Pour dressing and toss. Serve.

Gosh, I never even think about putting berries in my salad! I need to change that right away! Berries would be perfect in just about any salad, especially with a vinaigrette!

There is an avocado listed in ingredient list but not mentioned in recipe instructions nor does it look like it is included in the picture of the salad. Is it supposed to be included or was there an error in ingredient list?
