Ingredients

For the salad:

  • 4 cups baby spinach
  • 1 cup blackberries
  • 1 avocado — , chopped
  • 2 tbsp crumbled feta cheese
  • 1 small yellow bell pepper — , diced
  • 2 Persian cucumbers — , sliced
  • 1/4 cup toasted walnuts — (can use candies walnuts)

For the dressing:

  • 1/4 cup olive oil
  • 3 tbsp light balsamic vinegar
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. For the dressing:
  2. In a small bowl combine all ingredients and stir together.
  3. For the salad:
  4. In a deep bowl, combine spinach, peppers, cucumbers, blackberries and walnuts. Pour dressing and toss. Serve.
