What kinds of pork chops are available on the market (at the grocery store)?

There are different cuts of pork available and depending on what you buy, the taste and cooking time and methods will vary.

Pork chops or steaks are the priciest part of the pig and are cut and priced similar to beef steaks. They come from the loin of the animal.

Here are the different cuts of pork chops that exist:

  1. Pork Shoulder Chops  or pork blade chops that have a lot of flavor, but require slower cooking and tenderizing, because they can be tough.(Recipe included in this roundup).
  2. Rib chops or center cut rib chops – these chops are tender with mild flavor. They come from the rib of the loin.
  3. Loin Chops -center cut loin chops, coming from the hip and loin toward the back of the pig. They often have a T-shaped bone and contain some tenderloin. They are perfect for quick cooking, but don’t have a very rich flavor.
  4. Boneless Pork Chops – this is one of my favorite pork cuts and I’ll share with you how I make them very soon. These chops are lean and come from the loin close to the head. I usually marinate them. They are not as flavorful as bone-in pork chops.
  5. Sirloin chops or steaks – these chops contain a lot of bone and come from the hip area of the pig. There is a lot of great pork flavor, but they are tough unless slow cooked or braised.

How do you cook pork chops?

There are a few different cooking methods to consider, depending on the cut of pork, what part of the pig it comes and its thickness and the time you have.

  • Grilling
  • Baking (roasting)
  • Slow Cooking or Pressure Cooking
  • Braising
  • Searing

No matter what cooking method you choose, make sure the pork is cooked to 145 F, which is considered the safe temperature for consumption.

You can also use a combination of 2-3 different methods, like for example searing on the stove top and then finishing cooking in the oven.

Baked Pork Chop Recipe

Oven Baked Bone-In Pork Chops Recipe – juicy, tender pork chops, seasoned with flavorful four ingredient dry rub and quickly baked in the oven to perfection.
Prep: 5 minutes
Cook: 20 minutes
Total: 25 minutes

Ingredients 

  • 1 1/2 lb Bone-In Pork Chops
  • 1/4 cup vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tsp paprika, can use smoked paprika

Instructions 

  • Preheat oven to 400F.
    Brush the pork chops with oil.
  • In a bowl, combine salt, pepper, onion powder and paprika. Season the bone-in pork chops with the seasoning. 
  • Transfer on a baking sheet. 
  • Bake pork chops for 15-20 minutes, until the internal temperature of the pork reaches 145F. 
  • Let the pork chops rest for 3 minutes before serving.
