How to make Taco Potatoes With Ground Beef:

What You’ll Need to Make This Recipe:

  • Yukon Gold potatoes
  • Lean ground beef
  • Onion (optional)
  • Taco seasoning
  • Cheddar cheese
  • Fresh toppings (avocado, red onion, cherry tomatoes, cilantro)
  • Olive oil and salt
  • Sour cream or your favorite salsa (optional)

How to Make It:

  1. Roast the potatoes – Toss diced potatoes with taco seasoning and olive oil, then bake at 425°F until golden and crispy.
  2. Cook the ground beef and onion– Brown the beef with chopped onion in a skillet, season, and mix well.
  3. Assemble – Combine beef and potatoes in a heatproof dish, top with cheese, and broil until melted.
  4. Add toppings – Finish with avocado, tomatoes, onion, and cilantro. Serve with sour cream or salsa.

Homemade Taco Seasoning

This is the way I make my taco seasoning at home, when I can’t find any at the store.

Homemade Taco Seasoning (Makes ~3 tbsp)

  • 1 tbsp chili powder
  • 1 ½ tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • ¼ tsp cayenne (optional)
  • 1 tsp salt (adjust to taste)

Mix and store in a jar for up to 3 weeks.

Recipe Tips:

  • For extra flavor, add smoked paprika, more oregano or a squeeze of lime to the seasoning.
  • Make it spicy by adding diced jalapeños or extra cayenne.
  • Use different cheeses like Monterey Jack or Pepper Jack for variation.
  • Protein Variety – try ground turkey or plant-based crumbles instead of beef.
  • Extra crunch with crushed tortilla chips or crispy fried onions on top.
  • Add some heat – you can add a splash of hot sauce to the ground beef, while cooking.

Easy Dish With Potatoes and Ground Beef

Ingredients 

For the potatoes:

  • 2 lb Yukon Gold potatoes
  • 2 tbsp taco seasoning
  • 1/2 tsp salt
  • 2 tsp olive oil

For the ground beef:

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 small yellow onion, chopped, (optional)
  • 1 tbsp taco seasoning
  • 2 tbsp water, optional
  • 1 1/2 cups grated cheddar cheese

Toppings:

  • 1 large avocado, diced
  • 1/4 red onion, chopped (can use green onion instead)
  • 1 cup cherry tomatoes, halved
  • Chopped cilantro
  • 1/2 cup sour cream
  • Pico de Gallo, salsa, or guacamole (optional)

Instructions 

For the potatoes:

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
    Yukon gold potatoes cut into small cubes, seasoned with Taco seasoning and olive oil on a baking sheet
  • Wash and dice potatoes (no need to peel).
  • Toss with taco seasoning and olive oil.
  • Spread on the baking sheet in a single layer.
  • Bake for 30 minutes, or until golden brown.

For the ground beef:

  • Heat a skillet over medium-high heat. Add olive oil.

  • Add ground beef. Cook for 5-6 minutes, breaking it up until browned. Add the chopped onion. Cook for 3 minutes.
  • Stir in taco seasoning and salt. Add water if needed.

Assemble the dish:

  • Combine cooked potatoes and beef.

  • Place in a heatproof skillet. Top with cheese.
  • Broil at 425°F for 5 minutes until cheese melts.

  • Let cool for 5 minutes. Add toppings.
  • Serve with sour cream or your favorite salsa, Pico de Gallo or guacamole.

Notes

Storage Tips:
Store leftovers in an airtight container in the fridge for up to 3 days.
Freeze without toppings for up to 2 months.
Prep potatoes and beef ahead for easy assembly later.
Substitute red onion with green onion in the topping.
