  • 3 medium Russet or Yukon Gold potatoes, washed and scrubbed (or use 4 smaller potatoes)
  • 1 tbsp olive or vegetable oil
  • ยผ tsp salt
  • ยผ tsp black pepper
  • 2 cups shredded cheddar cheese
  • 6 slices pork bacon, cooked and chopped
  • 1-2 green onions, chopped
  • Optional: Italian seasoning, oregano, or red pepper flakes for extra flavor

Cook the Bacon:
