Ingredients
- 3 medium Russet or Yukon Gold potatoes, washed and scrubbed (or use 4 smaller potatoes)
- 1 tbsp olive or vegetable oil
- ¼ tsp salt
- ¼ tsp black pepper
- 2 cups shredded cheddar cheese
- 6 slices pork bacon, cooked and chopped
- 1-2 green onions, chopped
- Optional: Italian seasoning, oregano, or red pepper flakes for extra flavor
Instructions
Cook the Bacon:
- Preheat oven to 375°F (190°C).
- Line a baking sheet with aluminum foil, then place a sheet of parchment paper on top.
- Lay bacon slices on the parchment paper and bake for 10-15 minutes, flipping once if needed, until golden and crispy.
- Transfer bacon to a paper towel-lined plate and let cool. Once cooled, chop into small pieces.
Bake the Potato Slices:
- Slice the potatoes into ½-inch (1.25 cm) thick rounds (or slightly thinner for crispier slices).
- Place on a parchment-lined baking sheet. (If using the same baking sheet from the bacon, drain excess grease first.)
- Brush the tops with olive oil and season with salt and black pepper.
- Bake at 375°F (190°C) for 20 minutes, until the edges are golden.
- Flip the potatoes and bake for 10 more minutes until tender.
- Sprinkle shredded cheese over the potato slices. If using additional seasonings, add them now.
- Return to the oven and bake for 5-7 minutes, until the cheese is fully melted and bubbly.
