What You’ll Need For This Recipe:

  • PotatoesRusset for extra crispiness, or Yukon Gold, if this is what you have.
  • Olive or vegetable oil – Helps the potatoes crisp up and not stick to the baking dish.
  • Cheddar cheese – Melts perfectly for that gooey, cheesy bite. Mozzarella or gouda can be used instead.

Baked Potato Slices

Easy to make, topped with melted cheddar cheese, crispy bacon, and green onions. The perfect snack made with pantry staples!

Ingredients 

  • 3 medium Russet or Yukon Gold potatoes, washed and scrubbed (or use 4 smaller potatoes)
  • 1 tbsp olive or vegetable oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 cups shredded cheddar cheese
  • 6 slices pork bacon, cooked and chopped
  • 1-2 green onions, chopped
  • Optional: Italian seasoning, oregano, or red pepper flakes for extra flavor

Instructions 

Cook the Bacon:

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with aluminum foil, then place a sheet of parchment paper on top.
  • Lay bacon slices on the parchment paper and bake for 10-15 minutes, flipping once if needed, until golden and crispy.
  • Transfer bacon to a paper towel-lined plate and let cool. Once cooled, chop into small pieces.

Bake the Potato Slices:

  • Slice the potatoes into ½-inch (1.25 cm) thick rounds (or slightly thinner for crispier slices).

  • Place on a parchment-lined baking sheet. (If using the same baking sheet from the bacon, drain excess grease first.)
  • Brush the tops with olive oil and season with salt and black pepper.
  • Bake at 375°F (190°C) for 20 minutes, until the edges are golden.
  • Flip the potatoes and bake for 10 more minutes until tender.
  • Sprinkle shredded cheese over the potato slices. If using additional seasonings, add them now.
  • Return to the oven and bake for 5-7 minutes, until the cheese is fully melted and bubbly.

Final Toppings & Serving:

  • Remove from the oven and top with chopped bacon and green onions.
