Easy Chicken Tortilla Soup – The best, very quick and easy to prepare homemade chicken tortilla soup recipe.

This soup requires minimal ingredients and just 20 minutes to prepare. Perfect for a weeknight meal. Loaded with chicken. Super easy to make, loaded with authentic seasoning and great for a chilly day.

Have you ever heard of can chicken tortilla soup? This soup is made with pretty much mostly canned ingredients like canned corn, tomatoes, beans, stock, chili peppers and pre-cooked shredded chicken.

The soup I’m sharing with you today is made with a few canned items – corn, black peans and tomatoes. I did cook my own chicken breast and shredded it. Store bought, pre-shredded chicken or use rotisserie chicken.

Easy Chicken Tortilla Soup

What is chicken tortilla soup? Sopa de tortilla, is a traditional Mexican soup made with fried tortilla pieces. The soup I’m sharing with you today is not an authentic one. It is made with easy to find ingredients, resembling Mexican flavors for your convenience and tastes great!

What ingredients do I need to make this Easy Chicken Tortilla Soup?

  • olive oil
  • onion
  • garlic
  • cumin
  • chili powder
  • oregano
  • salt
  • corn
  • beans
  • diced tomatoes
  • tomato paste
  • chicken stock

Is it ok to use canned beans, corn and tomatoes in chicken tortilla soup?

Yes, while I’m not a huge fan on canned foods, in this recipe they make it super quick and easy to prepare and I love it.

Frozen (defrosted) corn and beans could be used. Fresh peeled and diced tomatoes can be used if you have any.

How to make easy chicken tortilla soup?

  1. Heat olive oil in a pot. Add onion and garlic and cook for 2 minutes.
  2. Add the spices.
  3. Then add in corn, black beans, diced tomatoes, tomato paste (optional), stock and chicken. Cook for 10-15 minutes.
  4. Season with salt to taste.
  5. Serve with the desired toppings.

Adding more heat to the chicken tortilla soup can be achieved by adding a 2 oz can of diced green chilis.

How to garnish chicken tortilla soup?

There are many different ways to garnish this Easy chicken tortilla soup.

Some options are:

  • sliced avocado
  • jalapeno peppers
  • cilantro
  • lime wedges
  • sour cream
  • cheese
  • fried corn tortilla strips (this is an amazing topping, but I stay away from the extra carbs and rarely make it)

How to thicken chicken tortilla soup?

If you look at the recipe and photos, this soup has clear broth. It is light, not thick. If you are a fan for creamy, thicker soups, you can add 1 tbsp of cornstarch or flour, mixed with 1-2 tablespoons of cold water to the soup, right before it is done and cook for 1-2 more minutes. This way you have a thicker soup.

Ingredients 

  • 2 tbsp olive oil
  • 1 small onion
  • 2 garlic cloves
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/8 tsp black pepper
  • one 15 oz can of corn, drained
  • one 15 oz can of black beans, drained
  • 1 15 oz can of diced tomatoes, tomatoes with chilis is fine
  • 1 tbsp tomato paste, optional
  • 4 cups chicken stock
  • 2 cups shredded chicken, homemade or store bought
  • salt to taste

For serving (optional):

  • tortilla chips
  • sour cream
  • cilantro
  • lime
  • avocado

Instructions 

  • Heat olive oil in a pot. Add onion and garlic and cook for 2 minutes.
  • Next add the spices.
  • Add in corn, black beans, diced tomatoes, tomato paste (optional), stock and chicken. Cook for 10-15 minutes.
  • Season with more salt to taste.
  • Serve with the desired toppings.

Notes

Optional: Add 2 oz can of chili peppers to the soup for more flavor.
