Ingredients

  • 2 tbsp olive oil
  • 1 small onion
  • 2 garlic cloves
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/8 tsp black pepper
  • one 15 oz can of corn drained
  • one 15 oz can of black beans drained
  • 1 15 oz can of diced tomatoes tomatoes with chilis is fine
  • 1 tbsp tomato paste optional
  • 4 cups chicken stock
  • 2 cups shredded chicken homemade or store bought
  • salt to taste

For serving (optional):

  • tortilla chips
  • sour cream
  • cilantro
  • lime
  • avocado

Instructions

  • Heat olive oil in a pot. Add onion and garlic and cook for 2 minutes.
  • Next add the spices.
  • Add in corn, black beans, diced tomatoes, tomato paste (optional), stock and chicken. Cook for 10-15 minutes.
  • Season with more salt to taste.
  • Serve with the desired toppings.

Optional: Add 2 oz can of chili peppers to the soup for more flavor.
