Keto Broccoli Soup – Very Easy To Make, Panera Copycat recipe, that is delicious, filling and perfect for people on low-carb, Keto diet.

It is still pretty cold around here and I’ve been making a lot of soups lately. One of my all time favorite soups is Panera’s Broccoli and Cheddar Soup, that I make very often. I did changethe recipe a little recently, because I have been following a low carb diet. So no flour, carrots or milk in this Keto Broccoli Soup Recipe.

Loaded with cheese and topped with bacon this soup is ready in 30 minutes. You have the option to blend it or just use a potato masher to smash the broccoli for a chunkier consistency.

Keto Broccoli Soup:

This is a straightforward recipe with a few adaptations from the original, very popular Broccoli Cheddar Soup. I love making it with fresh broccoli, but frozen is definitely an option.

Either store bought grated or a block of cheddar cheese will be fine. I know people recommend grating your own cheese and I agree, because store bought, packaged grated cheeses are full of starches, to the cheese doesn’t clump. Either option works in the recipe. Using pre-grated cheese is definitely easier.

You can either use chicken or vegetable stock, low-sodium preferably. Using a mix of water and dehydrated veggies, instead of vegetable stock is an option as well.

Top this soup with cooked crumbled bacon to add more fat and crunch.

What ingredients do I need to make Keto Broccoli Soup?

  • butter
  • onion
  • garlic
  • broccoli
  • vegetable stock
  • heavy cream
  • cheddar cheese
  • bacon
  • Xantan Gum (optional)

How to make Keto broccoli soup?

  1. Melt butter in a pot and pot. Add onion and cook for 2 minutes, stirring frequently until softened. Add garlic and cook for 1 more minute.
  2. Add broccoli, stock, salt and pepper.
  3. Bring to a boil then simmer until the broccoli is tender, for around 20 minutes.
  4. Mash broccoli with a potato masher of you prefer smaller pieces. You can also use an immersion blender to blend the soup.Add in the Xantan gum mixed with 1 tablespoon of warm water then stir.
  5. Add in the heavy cream and cheese.
  6. Serve topped with bacon.

How to thicken Keto Broccoli And Cheddar Soup?

This soup could be a little watery so you may want to add some thickness to it. Traditional soups are thickened with either cornstarch or flour, mixed with some cold (or lukewarm) water. While you can still use small amounts of cornstarch in some Keto recipes, I don’t recommend flour.

Using Xantan gum, mixed with water is the best option to thicken this soup.

If you prefer the soup not too thick, you can just omit the thickener.

  • 2 tbsp butter
  • 1/4 cup onion
  • 1-2 garlic cloves, minced
  • 2 cups chicken or vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups broccoli flourets
  • 2/3 cup heavy cream
  • 1 cup sharp cheddar cheese
  • 3 strips cooked bacon, chopped
  • 1/4 tsp Xantan gum

Instructions
