Servings: 8 servings, 1/2 cup each
- 2 tbsp butter
- 1/4 cup onion
- 1-2 garlic cloves minced
- 2 cups chicken or vegetable broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups broccoli flourets
- 2/3 cup heavy cream
- 1 cup sharp cheddar cheese
- 3 strips cooked bacon chopped
- 1/4 tsp Xantan gum
Melt butter in a pot and pot. Add onion and cook for 2 minutes, stirring frequently until softened. Add garlic and cook for 1 more minute.
Add broccoli, stock, salt and pepper.
Bring to a boil then simmer until the broccoli is tender, for around 20 minutes.
Mash broccoli with a potato masher of you prefer smaller pieces. You can also use an immersion blender to blend the soup.Add in the Xantan gum mixed with 1 tablespoon of warm water then stir.
Add in the heavy cream and cheese.
Serve topped with bacon.
