Keto Broccoli Soup

Ingredients

  • 2 tbsp butter
  • 1/4 cup onion
  • 1-2 garlic cloves minced
  • 2 cups chicken or vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups broccoli flourets
  • 2/3 cup heavy cream
  • 1 cup sharp cheddar cheese
  • 3 strips cooked bacon chopped
  • 1/4 tsp Xantan gum

Instructions

  • Melt butter in a pot and pot. Add onion and cook for 2 minutes, stirring frequently until softened. Add garlic and cook for 1 more minute.
  • Add broccoli, stock, salt and pepper.
  • Bring to a boil then simmer until the broccoli is tender, for around 20 minutes.
  • Mash broccoli with a potato masher of you prefer smaller pieces. You can also use an immersion blender to blend the soup.Add in the Xantan gum mixed with 1 tablespoon of warm water then stir.
  • Add in the heavy cream and cheese.
  • Serve topped with bacon.
