What Cucumbers Work Best?

You can make this cucumber radish salad with almost any type of cucumber.

Good options include:

โ€ข English cucumbers
โ€ข Persian cucumbers
โ€ข garden cucumbers
โ€ข pickling cucumbers

I personally love using small Persian cucumbers because they are crisp, slightly sweet and have very few seeds.

Peeling the cucumbers is optional. I usually leave the skin on for extra texture and color.

Dressing Options

There are a few different ways to dress this cucumber radish salad.

Light vinaigrette (this recipe)

Olive oil and apple cider vinegar create a light dressing that keeps the salad fresh and crisp.

Creamy version

In some Eastern European and Russian versions of cucumber radish salad, the dressing is made with:

โ€ข Greek yogurt
โ€ข sour cream
โ€ข mayonnaise

This produces a richer, creamier salad.

Can You Make This Salad Ahead?

Yes, but itโ€™s best served fresh.

You can prepare it up to 3 hours ahead and keep it refrigerated.

Cucumbers and radishes release moisture as they sit, which softens the vegetables and slightly dilutes the dressing. If needed, you can refresh the flavor with a little extra vinegar and salt before serving.

What To Serve With Cucumber Radish Salad

This fresh salad pairs well with many main dishes.

Some great options include:

โ€ข Denver steak
โ€ข Whole roast chicken with potatoes
โ€ข Pan seared salmon
โ€ข Baked Halibut
โ€ข Lamb loin chops

It also works well next to lighter meals or as part of a summer barbecue spread.

Helpful Tips

โ€ข Slice the vegetables thinly for the best texture.
โ€ข Use fresh dill whenever possible for the best flavor.
โ€ข If cucumbers are very watery, lightly salt them and drain before mixing.
โ€ข Add chopped chives or parsley for extra flavor.
