  • cucumbers
  • radishes
  • olive oil
  • apple cider vinegar
  • salt
  • honey (optional)
  • dill
  • green onion (optional)

What cucumbers to use for this radish cucumber salad?

Any cucumber works for this salad.

You can use English, Persian or even pickling cucumbers.

Do you need to peel cucumbers for this salad? It is up to you. I usually don’t peel them.

I like small Persian cucumbers for my salads, whenever I have them in the fridge. Their size is just perfect for this salad.

How to make cucumber radish salad

  1. Wash and scrub radishes. Wash cucumbers.
  2. Slice cucumbers and radishes into thin slices.
  3. Place in a bowl.
  4. In a small bowl combine all ingredients for the dressing.
  5. Pour over the vegetables and stir to coat in dressing.
  6. Top with dill and green onion.
  7. Serve or refrigerate for up to one day.

Dressing for cucumber radish salad

There are a few different options when it comes to dressing for this cucumber radish salad. This type of dressing is popular in Russian cuisine.

You can make a creamy, Greek yogurt, sour cream or mayo based dressing, which produces creamier, more filling salad. This is the dressing typically used in Russian cucumber radish salad.

The second option is to make this very light vinegar and oil based dressing, that is a non yogurt dressing, that I usually prefer. The salad is extra light with a little zing from the vinegar.

This cucumber radish salad also has a cooling effect from the radishes that go very well with cucumbers.

Can you make this cucumber radish salad in advance?

Make it no more than 3 hours in advance and keep refrigerated.

Both radishes and cucumbers will soften and absorb the dressing and the salad will taste delicious.

If you leave the vegetables with the dressing on for too long, they will get too soft and might start fermenting. Also the acidity from the vinegar will get more subtle, so you may have to add more.

What to serve this light cucumber radish salad with?

Serve this colorful salad with some grilled steak, chicken or fish. There also are variations of the salad where it is served with tomatoes or creamy burrata.

Cucumber Radish Salad

Ingredients 

  • 2 cups cucumbers
  • 2 cups radishes
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp salt
  • 2 tbsp dill, fresh
  • 2 tbsp green onions
  • 1/4 tsp sweetener , Erythritol for Keto, honey or agave nectar

Instructions 

  • Wash and scrub radishes. Wash cucumbers.
    Slice cucumbers and radishes into thin slices.
  • Place in a bowl.
    In a small bowl combine all ingredients for the dressing. 
  • Pour over the vegetables and stir to coat in dressing.
    Top with dill and green onion.
