  • 1 medium head of white cabbage (about 2.2 lbs)
  • 3 large eggs
  • 200 ml (about 3/4 cup) milk
  • 1 cup Gouda cheese, grated (reserve half for topping)
  • 3 tbsp all-purpose flour
  • 2–3 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/3 tsp ground nutmeg
  • 1 tsp paprika
  • Salt and black pepper, to taste ( I start with 1 tsp salt and then add more after baking. 2 tsp salt may be a little too salty to most people).
  • 2–3 green onions, finely chopped (for garnish)

Directions:

1. Fry the Cabbage:

  • Shred the cabbage finely using a knife or mandoline.
  • Heat 2–3 tablespoons of olive oil in a large skillet over medium heat.
  • Add the shredded cabbage and sauté, stirring frequently, until tender and slightly golden (about 10–12 minutes). Season lightly with salt and pepper.

2. Prepare the Custard Sauce:

  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Gradually add the flour while whisking to prevent lumps.
  • Stir in garlic powder, nutmeg, paprika, half of the grated cheese, and a pinch of salt and pepper.

3. Assemble the Casserole:

  • Preheat the oven to 180°C (350°F).
