I like to make a cabbage salad at least once a week.

Cabbage is an under appreciated vegetable in my opinion, very easy to find at almost every grocery store and relatively inexpensive.

Luckily it is perfect for low carb diets, Dress it with a creamy mayo dressing and you have a delicious Keto cabbage salad for lunch, dinner or a family gathering.

How to cut cabbage for a salad?

It is important to mention that you can use bags of pre-cut cabbage from the grocery store in this recipe.

I like to buy heads of cabbage from the store and finely shave them by myself with a sharp knife.

A mandolin slicer can be used, but as I’ve told you before, I’m not a huge fan of these and I don’t currently own one.

To slice a head of cabbage for this Keto Cabbage Salad Recipe:

  1. Cut the cabbage in half from top to bottom, straight through the core with a large knife.
  2. Place each half cut side down on a cutting board.  Cut in half again from top to bottom, through the core.
  3. Then remove the core from all four pieces of cabbage.
  4. To shred the cabbage for a salad – keep quarters cut side down on a cutting board and slice along the horizontal edge into thin strips or vertically for longer strands.

Cabbage salad on the other hand can be made with different kinds of dressing, you can add more veggies to it and even top with protein like chicken or fish.

Difference between cabbage salad and cabbage slaw

Shaved cabbage plus a creamy dressing equals Cole slaw, right? 

Cole Slaw is made with finely shaved cabbage and sometimes carrots, dressed with a creamy mayo dressing or a light vinaigrette.

Cabbage salad on the other hand can be made with different kinds of dressing, you can add more veggies to it and even top with protein like chicken or fish.

Since cucumbers and radishes are Keto approved vegetables and pair well with cabbage, I decided to use them in the recipe.

What ingredients do you need for this Keto Cabbage Salad Recipe?

This is a low carb salad and we need to use only Keto approved vegetables.

I often get tired from eating lettuce salads and this cabbage, cucumber and radish one is a great substitute.

This salad is made with green and purple cabbage, cucumbers and radishes. All rich in vitamins K, A, fiber and Magnesium.

If you don’t have any purple cabbage, you can use green cabbage only.

I don’t recommend using only purple cabbage in the recipe, since red cabbage has earthier flavor, but it also contains more antioxidants.

To make the creamy dressing you’ll need :

  • mayonnaise
  • sour cream (optional)
  • Dijon mustard
  • apple cider vinegar
  • salt and black pepper.

A little bit of low carb sweetener can be added to the dressing as well. No more than 1 tsp of powdered erythritol or Swerve.

How to make Keto cabbage salad?

  1. In a small bowl combine all ingredients for the dressing and whisk to combine. Set aside.
  2.  Shave the cabbage, if you are not using pre-shaved, packaged cabbage.
  3. Slice the cucumbers and radishes. Place vegetables in a bowl.
  4. Using a little bit of salt, you can sprinkle it over the cabbage and massage it (optional).
  5. Pour the dressing on top of the salad and stir to evenly coat.
  6. Let the salad sit with the dressing for 30 minutes before serving.

Can you make this low carb cabbage salad in advance?

You can pre cut the cabbage up to 2 days in advance and keep in a zip lock bag in the fridge. The salad dressing can be also made up to 2 days on advance, but  it only takes 1 minute to whip up.

The cabbage together with the dressing can be made up to 2 days in advance. The reason why is because it may develop an odd odor and even get mold.

Make sure you put the salad in an air tight containers in the fridge.

Keto Cabbage Salad

Keto cabbage salad recipe – creamy mayo based dressing over tender, thinly shaved cabbage, cucumbers and radishes.

Ingredients 

  • 10 cups cabbage, I used 1/2 green and 1/2 purple
  • 1 cup chopped cucumbers
  • 1 cup sliced radishes
  • 1 1/2 cups mayonnaise
  • 2 tablespoons sour cream, optional
  • 1 tsp Dijon Mustard
  • 1 tablespoon apple cider vinegar
  • 2 tsp salt, or more to taste
  • 1/4 tsp black pepper

Instructions 

  • Add cabbage to a large bowl. Sprinkle 1 tsp salt and using your hands press the cabbage to soften.
  • Then add in the cucumber and radish.
  • In a small bowl combine the mayo, sour cream, mustard, salt, pepper and vinegar and whisk to combine.
  • Add the dressing to the salad and stir to evenly coat .
  • Let the salad sit for 30 minutes, then serve.
  • Keep in the fridge in an air tight container for up to 2 days.
