Easy Cabbage Salad – this is seriously the best, simple, basic cabbage salad recipe, made with shredded cabbage, carrots and tomatoes (optional). Fresh and low-calorie apple cider vinegar dressing makes is light and perfect for summer. This salad goes well with chicken, steak or seafood.

This easy and addictive cabbage salad is made with green cabbage, but you can also use red cabbage or a combination of both for a colorful look.

Carrots are added for sweetness and cucumbers to crunch, so these is no ramen needed. I also added chopped tomatoes, but this is totally optional. Tangy apple cider vinegar dressing adds the perfect taste to the salad.

You can skip the tomatoes and carrot and this way you have a great Keto friendly salad. Double on the cucumbers and add radishes instead.

What ingredients do I need to make a cabbage salad?

  • cabbage
  • carrots
  • tomatoes
  • cucumbers
  • olive oil
  • apple cider vinegar
  • salt
  • sweetener (sugar, low-carb sweetener or honey)
  • dill or parsley (freshly chopped, optional)

How to make this cabbage salad?

1.Pick the cabbage.

Look for green cabbage heads at the store that are not too big, heads are firm and relatively heavy and there are no blemishes on the outside leaves. Cabbage is in its peak season between November and April. Of course no matter what you do, you may still not be able to find good cabbage at the store, sometimes heats are too firm and when cut the cabbage tastes “plasticky”. Shredding in a food processor is very easy and helps when you have cabbage that is too firm to work with.

Another thing that helps with tough cabbage is adding a little bit of salt over the shredded cabbage and using your hands to gently squeeze the cabbage, this will soften it.

2.Shred or finely chop the cabbage:

Use a sharp knife or a food processor.

3.Assemble the salad:

Place cabbage in a bowl. Top with carrots, cucumbers, tomatoes and dill (optional). Pour the dressing on top. Toss to combine.

How to make an apple cider vinegar dressing for cabbage salad?

There are many different dressings that will go well with this easy basic cabbage salad. But my favorite, light and healthy dressing is made with apple cider vinegar and olive oil. If you are not a fan or apple cider vinegar or find the acidity too high, you can use white or rice wine vinegar.

In a small bowl, whisk together apple cider vinegar, olive oil, salt and sweetener. Pour on top of the salad and make sure cabbage is evenly coated in dressing.

Ingredients 

Dressing:

  • 1/4 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1-2 tsp sweetener, honey, sugar or low-carb sweetener
  • 1 tsp salt
  • 1 tsp Dijon mustard, optional
  • pinch of black pepper, optional

For the salad:

  • 6 cups shredded cabbage
  • 1/4 cup shredded cabbage
  • 1/2 cup sliced cucumber
  • 1 cup chopped tomatoes
  • 2 tbsp chopped fresh dill

Instructions 

  • Whisk all ingredients for the dressing in a small jar and shake.
  • In a bowl, combine all ingredients for the salad and pour dressing on top.
  • Stir and let it sit for 10 min, then serve. You may need to add more salt to season the salad for your taste.
