Easy Chinese Chicken Salad Recipe – a salad for the non Asian home cooks. Made with red and green cabbage, shredded chicken, carrots and Chow Mein noodles. Topped with easy peanut dressing. 
This Easy Chinese Chicken Salad is quick and simple to make and the flavors in it are amazing.
Since I’m not Asian and I don’t usually cook Asian food at home, this recipe is intended for the non Asian cooks out there. Not 100% authentic, since I usually make it with simple ingredients, I already have at home. It is tasty and nutritious. The peanut dressing, made with peanut butter, soy sauce, Sriracha and oil is easy to prepare and perfect.

This Easy Chinese Chicken Salad is made with regular cabbage, instead of Napa or Savoy cabbage. The reason why? Asian food for non Asian people and also because regular cabbage is widely available, unlike Napa and Savoy. And when finely shredded, it is soft and tender, prefect for a salad.
I love cabbage salads, they are nutritious and filling. Cabbage also happens to be one of the few vegetables, that can stay in the fridge for weeks, without going bad. I love that!
These are may Chinese salad recipes available online and a lot of different variations.
But this Chinese cabbage salad is very simple. All you need is just cabbage, carrots, chicken and Chow Mein. You can use toppings (garnishing) like chopped cilantro and peanuts, but they are totally optional.
And what makes this salad so good is actually the dressing. Brings out the perfect balance of flavors. It is creamy, salty and delicious.
The peanut dressing is made with peanut butter (I used creamy), sesame oil, rice wine vinegar, water, soy sauce, Sriracha, garlic and ginger.
Again, the peanut salad dressing not 100% authentic, but good enough for me. What I love the most – made with ingredients I already have. No need to run to the Asian store and spend hours looking for stuff, you’ve never seen before.

- 2 cups green cabbage shredded
- 1 cup red cabbage shredded
- 1 cup carrots shredded
- 2 cups chicken shredded
- 1 cup Chow Mein noodles
- cilantro (optional, for garnishing)
- peanuts (optional, for garnishing)
- scallions (green part only, optional, to taste)
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tsp sesame oil (or vegetable oil)
- 1/4 cup sriracha or less, to taste
- 2 tbsp rice wine vinegar (substitute 1 tbsp white vinegar and 1 tbsp water)
- 2 tbsp water
- 1/4 tsp garlic powder
- 1/4 tsp fresh ginger dried could be substituted, start with 1/8 tsp and add more if needed
- 1/4 tsp sesame seeds optional
Combine all ingredients in a bowl. Whisk to incorporate. Add more water if it appears thick. Start with 2 tbsp Sriracha and add up to 2 more tbsp, to taste.
In a bowl, combine cabbage, carrots, chicken and Chow Mein. Top with peanuts, scallions and cilantro (optional), for garnishing.
Add 1/2 of the dressing, toss until evenly coated. Add more dressing, if you'd like. Serve.
