Happy Sunday guys! I hope you are having a nice long holiday weekend! Mine is going well. Today is my husband’s birthday and we are celebrating!
We are having a Birthday party in the house later today.
So my plan for yesterday was to cook dinner for two of us and then go out to see a movie. Well, the going out part never happened. You guys know me – I love to bake, so I decided to bake the cake for the party. While, my plan was for a simple vanilla cake and fill it with blueberry whipped cream and then cover it with buttercream frosting, at the last moment I decided that I wanted to cover the cake in fondant. I’m not that experienced with fondant cakes and it took forever to make this one. It turned out amazing and I can’t wait to try it later today.
The whole “cake thing” kind of ruined our going out plans. But I did cook dinner and we watched a movie at home (Mad Max). This fettuccine with homemade red pasta sauce is one of my favorite recipes when I don’t have a lot of time to cook and also we both love pasta.
I did make my own sauce, but you can definitely use store bought if it is easier. There is no meat in this dish, but at times I just prefer to go meatless. Add some meat of your choice if you’d like.
My little secret to the wonderful taste of this pasta – I decided to use Stella® Fontinella Cheese, which added a little bit of sharpness and sweetness to the dish.

Fettuccine With Homemade Red Pasta Sauce And Fontinella Cheese
Ingredients
- For The Pasta Sauce:
- one 15 oz can crushed or diced tomatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp sugar or honey
- 1/2 tsp oregano
- 1/2 tsp dried basil — (or 3-4 fresh basil leaves)
- 2 garlic cloves — , minced
- 1/2 yellow onion — , chopped
For the pasta:
- 4 oz fettuccine or pasta of your choice
- 1 tbsp pine nuts — (optional)
- Stells® Fontinella Cheese — , shredded
Instructions

In a blender combine tomatoes, garlic and onion and pulse 3-4 times, until combined, but still chunky. Transfer to a saucepan, add salt, basil, oregano, sugar and olive oil and cook on medium until thickened (10-15 minutes). Stir frequently.

In the meantime, bring a medium pot of water to a boil. Cook pasta according to package directions. Drain well.

Transfer pasta to 2 bowls and divide sauce between them. Top with pine nuts (optional) and shredded Fontinella cheese. Serve and enjoy!
