Pulled Pork Quinoa Bowls

Ingredients 

Quinoa

  • 1 cup uncooked quinoa, rinsed
  • 2 cups water or broth
  • 1 tablespoon butter or olive oil
  • Salt, to taste

Bowls

  • 2 cups cooked pulled pork
  • 2 medium avocados, diced
  • 1 cup shredded cheese, cheddar, Monterey Jack, or Mexican blend
  • 1 cup black or pinto beans, optional

Corn Salsa

  • 1 1/2 cups corn, fresh, frozen, or canned
  • 3 tablespoons chopped red onion
  • 3 tablespoons chopped cilantro
  • 1/2 small jalapeño, finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1/4 teaspoon chili powder, optional

Pico de Gallo

  • 4 ripe plum tomatoes, diced
  • 1 small red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • Salt to taste

For Serving

  • Sour cream, optional
  • Hot sauce
  • Lime wedges

Instructions 

Cook the quinoa

  • In a saucepan, combine quinoa, water, and butter.
  • Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
  • Fluff with a fork and season lightly with salt.

Prepare toppings

  • Mix corn salsa ingredients in one bowl.
  • Combine pico de gallo ingredients in another. Chill until ready.

Assemble bowls

  • Divide quinoa between bowls.
  • Top with warmed pulled pork, corn salsa, pico de gallo, avocado, beans (if using), and cheese.
  • Finish with sour cream, hot sauce, and lime.
  • Serve warm.
