This Cucumber Pepper Salad Recipe is made with fresh cucumbers and green peppers from my garden. Topped with a tangy homemade dressing and salty, creamy Bulgarian Feta cheese.

Add some green onions for extra flavor. Quick and simple to make and delicious.

Have you ever thought of making a cucumber pepper salad?

This summer I ended up with a lot of fresh cucumbers and peppers from my garden and pretty much no tomatoes.

It is not a good year for tomato harvest. Since I usually use peppers and cucumbers in combination with tomatoes for salads like this Greek Salad or The Best Chickpea Salad, I had to get creative here.

There are quite a few trendy and viral cucumber salad recipes being shared by bloggers.

I’m excited to try some of them, but let me share this one with you.

How to make Cucumber Pepper Salad?

Fresh crunchy cucumbers of any kind, green peppers (the ones I used from my European Garden are called “Sweet Green Peppers, but bell peppers can be used), green onions, Feta cheese, olive oil, apple cider vinegar, salt, pepper, mustard (optional), hot sauce (optional) and oregano.

I seriously can’t stop eating this ever since I made it last week.

Ingredients for this cucumber green pepper salad recipe:

  • Cucumbers (English or Persian work best), it is important that the cucumbers are seedless, but you can use any kind. Just scoop out the seeds, once you cut the cucumbers in half.
  • Green peppers – sweet green peppers of any kind. Bell peppers will work, too.
  • Scallions – green onions for extra fresh flavor. Red or yellow onion can be used instead.
  • Feta cheese – Greek or Bulgarian feta will work
  • Olive oil – extra virgin, or any oil you use for salads and salad dressings
  • Apple cider vinegar – lemon juice or wine vinegar will work, but I just love the health benefits that apple cider vinegar provides
  • Salt and pepper to taste
  • Mustard – you need a little bit to add to the dressing.
  • Hot sauce (optional, you just need a few drops). I suggest you use hot sauce made from green peppers.
  • Dried oregano

How to make salad with chopped cucumbers and peppers:

For the dressing:

Whisk all ingredients in a bowl, or fill a jar with them, close the lid and shake until smooth.

For the salad:

Place all the chopped vegetables in a bowl. Top with Feta cheese and oregano. Drizzle the dressing on top. Serve.

Why make cucumber pepper salad without tomatoes?

There are many reasons, why you should skip the tomatoes this time. The combination of fresh watery cucumbers and a slightly bitter, but sweet green pepper flavor. The rest of the ingredients just make the salad perfect.

Another simple reason of why to skip them could be that you don’t have any on hand or you are not a tomato fan at all.

Could you add any other ingredients to this salad recipe?

The answer is yes. Possible add-ins could be:

  • Chopped Walnuts
  • Red onions (omit the green ones this time)
  • Avocado
  • Peppers of different colors
  • Baby spinach

Is it possible to make this green pepper salad in advance?

While I rarely make salads in advance, it is not impossible with this salad.

For best results:

Make the salad right before you are planning to serve it.

To save time:

Prep the dressing and chop the vegetables 1 day in advance. Store in the fridge. When ready to use assemble the salad.

Possible option:

You can still make the salad and combine it with the dressing up to 1 day in advance. Keep in mind that while the peppers will soften andf absorb the dressing, cucumbers could get soggy. Leave the cucumbers unpeeled to reduce this sogginess.

Cucumber Pepper Salad

Fresh and easy to make salad, perfect for summer. This Cucumber Pepper Salad Recipe is made with cucumbers and green peppers from my garden. Topped with green onions, a tangy homemade dressing and salty, creamy Bulgarian Feta cheese.

Ingredients 

  • Salad:
  • 2 medium English cucumbers, chopped into bite sized pieces
  • 4 small green peppers, or 2 large bell peppers, chopped
  • 1/4 cup chopped green onions
  • 1/2 cup crumbled feta cheese
  • Dressing:
  • 3 tbsp olive oil
  • 1 tbsp vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Hot sauce – optional, use a few drops or up to 1/4 tsp
  • 1 tsp mustard
  • Oregano for topping, optional

Instructions 

  • Salad:
  • Place the chopped cucumbers, peppers, green onions and crumbled Feta cheese in a bowl.
  • Pour the prepared dressing on top. Add more salt and vinegar if needed (make the salad to your taste).
  • Dressing:
  • Combine all ingredients in a jar and close the lid. Shake a few times. Pour on top of the salad.
