This crispy chicken burger is my copycat of one my kids ordered at Mandala Beach Bar in Greece — they loved it so much I had to recreate it at home.

Ingredients 

For the crispy chicken:

  • 2 large chicken breasts, cut into strips (2–3 per burger)
  • Salt and pepper, to season
  • 1 cup flour, salted
  • 2 eggs, beaten with a splash of water
  • cups panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • Vegetable oil, for frying

For the burgers:

  • 4 brioche burger buns, halved
  • Burger sauce, Heinz, or mayo + mustard + ketchup
  • Lettuce
  • Tomato, sliced
  • Onion, sliced
  • Cucumber, sliced
  • Cheese, optional Season the chicken strips with salt and pepper.
