Fig season here is short, and I refuse to waste it. When the figs at the market are soft and cheap, this fig toast is my lunch almost every day.

Crispy store-bought sourdough, a handful of arugula, creamy burrata, thin slices of fresh fig, a quick balsamic-honey drizzle and lots of black pepper.

It takes ten minutes, needs no oven, and looks like something you’d order at a café.

The thing that makes it work is how you slice the figs. Most people quarter them, but I slice them into thin rounds so they lie flat and cover the whole toast like a blanket.

Every bite gets fig, and nothing slides off.

The arugula underneath matters too. It keeps the bread from getting soggy and adds a peppery bite that balances the sweet fruit.

How to Make Fig Toast

Reduce the balsamic and honey, toast the bread, layer it up, drizzle and eat.

Ingredients for fig toast: sourdough slices, fresh figs, burrata, balsamic reduction, arugula and prosciutto
  • Simmer the balsamic vinegar and honey in a small pan over medium-low heat for 3–4 minutes, until it thickens enough to coat a spoon. Set aside to cool; it gets thicker as it cools.
  • Slice the sourdough thick, about ¾ inch (2 cm). Thin bread can’t hold the burrata and goes soggy.
  • Heat the olive oil in a skillet over medium heat and toast the bread 2–3 minutes per side, until golden and crisp at the edges.
  • Scatter a small handful of arugula over each warm toast.
  • Tear the burrata open and spread it over the arugula, letting the creamy center run into the gaps.
  • Slice the figs into thin rounds, about ¼ inch (5 mm), and overlap them on top.
  • Drizzle with the balsamic-honey reduction, add plenty of black pepper and a pinch of flaky salt, and eat right away.

Tips

  • Slice, don’t quarter. Thin rounds lie flat, cover the toast and look beautiful. Quartered figs roll around and fall off.
  • Put the arugula down first. It acts as a barrier between the wet burrata and the crispy bread.
  • Take the burrata out 15 minutes early. Straight from the fridge the center is firm. Slightly warmer, it spreads like cream.
  • Pat the burrata dry. It’s packed in liquid, and that water goes straight into your toast.
  • Reduce the balsamic with a little honey. Plain balsamic vinegar is too thin and sharp and soaks right into the bread. A few minutes on the stove turns it into a glossy, sweet-tart drizzle that stays on top. Don’t walk away from the pan; it goes from syrupy to burnt fast.
  • Don’t be shy with the black pepper. It brings out the sweetness of the figs and keeps the toast from tasting like dessert.

For a fuller lunch, serve fig toast with extra arugula dressed with olive oil and lemon.

Cut into strips, it works as an easy appetizer next to olives and cheese.

Fig Toast with Burrata and Arugula

Crispy sourdough fig toast layered with arugula, creamy burrata, thin slices of fresh fig and a balsamic-honey drizzle. Ready in 10 minutes, no oven.

Ingredients 

  • 2 thick slices store-bought sourdough bread, ¾ inch / 2 cm
  • 1 tbsp olive oil
  • 1 cup arugula
  • 1 ball burrata, 4 oz / 125 g
  • 3 –4 fresh figs
  • 3 tbsp balsamic vinegar
  • 1 tsp honey
  • Freshly cracked black pepper
  • Flaky sea salt

Instructions 

  • Simmer the balsamic vinegar and honey over medium-low heat for 3–4 minutes until syrupy. Let cool.
  • Heat the olive oil in a skillet over medium heat.
  • Toast the sourdough 2–3 minutes per side until golden and crisp.
  • Top each toast with arugula.
  • Tear the burrata and spread it over the arugula.
  • Slice the figs into thin rounds and layer them on top.
  • Drizzle with the balsamic-honey reduction, season with black pepper and flaky salt, and serve immediately.

Notes

  • Short on time: use store-bought balsamic glaze instead of the reduction.
  • Add a few slices of prosciutto for a salty version.
  • Assemble right before eating; the bread softens within 10 minutes.

FAQ

Can I make fig toast with dried figs? Yes, but slice them very thin and use just a few drops of the balsamic-honey reduction, or skip the honey.

Dried figs are much sweeter and chewier than fresh. A little extra black pepper and salt keeps the toast from turning into dessert.

What can I use instead of burrata? Torn fresh mozzarella is the closest swap, just firmer and less creamy.

Whipped ricotta or soft goat cheese also work, and goat cheese adds a nice tangy edge with sweet figs.

What’s the best bread for fig toast? A sturdy sourdough with an open crumb, sliced thick. I use store-bought sourdough, and it works perfectly.

There’s no need to bake your own for this. Soft sandwich bread collapses under the burrata, and a baguette is too narrow.

Is fig toast a healthy lunch? One toast is about 430 calories with roughly 14 grams of protein from the burrata and bread.

For a lighter version, use a smaller piece of burrata per toast and add more arugula. Keep the balsamic-honey drizzle light; a teaspoon per toast is plenty.
