What is cottage cheese and why is it gaining popularity lately?

Cottage cheese is not a new ingredient to me. I used to eat it with berries and sometimes drizzle some maple syrup or honey on top.

Cottage cheese is a curdled milk product with a mild flavor and a creamy, heterogenous, soupy texture. It is made from skimmed milk by draining curds but retaining some of the whey and keeping the curds loose. An essential step in the manufacturing process distinguishing cottage cheese from other fresh cheeses is the addition of a “dressing” to the curd grains, usually cream, which is mainly responsible for the taste of the product. Cottage cheese is not aged.

It is low in calories yet high in protein, selenium, some B vitamins, and phosphorus.

I’ve seen cottage cheese used in sandwiches and sauces as a replacement of mayonnaise. It works well in salad dressings, too.

This product can be used in smoothies, salads, fruit salads, pancakes or as an ingredient for cakes and brownies.

It is just perfect for desserts like this chocolate mousse, made with just 3 ingredients.

Make some crepes and fill them with cottage cheese, sweetened with powdered sugar or honey. Cottage cheese ice cream is very popular this summer, so it is just a matter of time to try it.

How to Make Cottage Cheese Chocolate Mousse?

Ingredients:

  • Cottage Cheese
  • Unsweetened cocoa powder
  • Liquid sweetener – Maple syrup, Agave nectar, honey or any liquid low-carb sweetener (not Stevia). Powdered or granulated sugar or erythritol will also work.
  • Optional: vanilla extract
  • For thinning the mousse (optional, you may not need to do so) – milk, either non dairy, dairy milk or cream.

Directions:

Place all ingredients in a blender or a food processor.

Blend until smooth.

Fill cups with the mousse.

Cover with plastic wrap.

Refrigerate for up to 3 days.

Recipe Tips:

  • What blender to use? Is a food processor better for this recipe?

Any blender will work, but it is best if you have access to a powerful one like Vitamix or an European Phillips. I blended it in my Nutribullet, because this is what I had on my kitchen counter. When you have a few blenders, you rotate them and use just one at a time. A food processor will work as well. Just make sure you stop it and scrape the bottom a few times, while making the mousse.

  • How to thin the chocolate mousse?

While blending the ingredients, you may notice that the mixture is too thick and the blender is having difficulty working with it. You can always add some heavy cream, milk or non dairy milk. I usually add coconut or almond milk. Then continue blending until smooth. The reason for this could be a cottage cheese that does not have a lot of liquid “dressing” in it. Another reason might be if you are making a small batch of the mousse and the blender is too deep.

  • Can you make it in advance?

Yes, this healthier chocolate dessert could made for up to 3 days in advance. Cover and store in the fridge, until ready to use.

  • The recipe card below gives you the ingredients necessary for 1 mousse. I suggest you double it (at least). The mousse is crazy delicious and I’m sure you don’t want to make your blender dirty for just one serving.
  • This is not a Keto (low-carb) recipe, since cottage cheese is not considered a Keto ingredient. Some people call it Keto Friendly, but if you really follow a low-carb diet, you should consider making this Chocolate Mousse instead.
  • This protein chocolate mousse is a gluten free dessert.
  • Toppings – chocolate chips, berries, whipped cream, shredded coconut.

  • 1 cup 220 grams cottage cheese
  • 2 tbsp cocoa powder, unsweetened
  • 2 tbsp sweetener of your choice, I used Maple Syrup

Instructions 

  • Place all ingredients in a blender and blend until smooth.
  • Serve immediately or refrigerate for up to 3 days.
