These banana chocolate chunk muffins can be made in under 30 minutes, require some basic ingredients and are sweet, soft and fluffy.

This muffin recipe is one of the first ones, that I shared back in 2014, when I was just starting my blog.

I originally shared this homemade chocolate chunk banana muffins recipe 10 years ago, and it quickly became a favorite among readers

It is also around the time, when I used to bake every day, test as many baking recipes as I can, because I always like to know what could go wrong and how my recipes could be improved.

Because baking is my passion and while these days I focus mostly on healthier, sugar-free, low-sugar and low-carb desserts, I still make my favorite chocolate chunk banana muffins once a month.

My 5 year old daughter often asks for muffins or cupcakes and I often offer her to make these chocolate chunk ones.

I can make any unhealthy muffins recipe that he requests, but this is not the point. I allow myself and my kids to enjoy some home baked sweet treats in moderation.

How to make the best banana chocolate chunk muffins?

Ingredients:

  • Ripe mashed bananas (see recipe tips)
  • Vanilla extract or paste
  • Egg (can use flax or chia egg)
  • Milk (non diary can be used)
  • Vegatable or coconut oil
  • Unsweetened cocoa powder
  • Sugar (or low-carb granulated substitute)
  • Salt
  • All-purpose flour
  • Dark or semi-sweet chocolate chunks or chips or a chocolate bar, cut into chunks
  • Baking powder and baking soda (yes, we need both, because often times just baking soda is not enough to lift the batter, while baking)

Directions

  • Preheat oven to 350F (175C)
  • You can use electric mixer or mix ingredients in a bowl by hand. In a bowl mash bananas with a fork. Add vanilla and the egg and mix well. Add oil and milk and stir to combine. Add sugar and stir again.
  • Add cocoa powder and mix until it is completely incorporated. Ad salt, baking soda and baking powder. Add flour. Mix just until combined.
  • Pour batter into paper lined muffin cups, about 3/4 full. Sprinkle with chocolate chips. Bake for 18-20 minutes on 350F (175C) until toothpick inserted comes out clean and muffin tops appear baked.
  • Remove from oven and let them sit in muffin tin for 5-7 minutes, then remove them and set on a baking rack. Serve at room temperature.

Can you guess?

I’ll tell you now:

  • Using very ripe (overripe) bananas – this is a must! If I learned one thing baking a lot through the years it is – always use ripe bananas. This way the baked goods are sweet and moist. The final result is so much different than if you just use unripe/green/ready to eat bananas. If your bananas aren’t ripe enough, you can bake them in the over for 15-20 minutes, until they turn brown on the outside and soft on the inside.
  • Do not over mixing the batter, otherwise you won’t achieve the perfect moist and fluffy texture on the inside.
  • Please, do not over bake these muffins for any reason, otherwise we are risking to turn them into try banana flavored chocolate muffins.
  • Can you make these gluten feee? The answer is yes. Make sure you use gluten-free flour and reduce the amount of it by 1/4 cup. You also need to add extra 1-2 tsp of baking powder.
