- 1 cup fresh cranberries
- 1 tbsp orange juice fresh
- 1 tsp orange zest
- 1 cup unrefined powdered sugar

Combine all ingredients in a bowl. Whisk to combine. Add more agave nectar or orange juice to thin the mixture if needed. Drizzle over the muffins, when baked and cool.
Preheat oven to 350F (180C). Generously spray a muffin tin with cooking spray. Set aside. (You can use muffin paper liners if you'd like instead).
In a bowl combine flour, salt and baking powder.
In another bowl (can use a mixer) beat eggs and agave nectar, then add yogurt and oil, mix to combine. Add vanilla and orange juice and zest. Whisk to combine.
Add dry ingredients and mix until combined. Fold in cranberries.
Divide mixture between 12 muffins cups. Bake for 25-30 minutes, until the tops are set and toothpick inserted comes out clean.
Let the muffins cool inside the tin for 5 minutes, than transfer to a cooling rack to cool completely.
I used this recipe to make unrefined powdered sugar.
