It is hot and humid outside. Watermelon is my favorite fruit this time of the year.

Sweet, juicy and hydrating! It is also perfect for cocktail recipes like this Watermelon Mojito recipe.

A delicious combination of watermelon juice, lime juice, some simple syrup, Bacardi white rum, mint and sparkling water. It only takes 5 minutes to make and makes the perfect drink to sip on by the pool or while you are sitting at the backyard.

This Watermelon Mojito Recipe could easily be transformed into a party cocktail – make a bug batch of it and serve it in a pitcher.

What ingredients do you need to make a watermelon mojito?

  • You need to make watermelon juice. This is pretty easy to do. Just put 2 cups of watermelon slices in a blender and blend until you get juice. You can then drain through a sieve or use it as it is.
  • You’ll need limes to juice them or just use store bought lime juice.
  • To make this watermelon mojito you need homemade or store bought simple syrup. Check this post out to see how to make simple syrup.
  • Ice
  • Fresh Mint leaves
  • White Rum
  • Watermelon Slices (for garnishing)
  • Lime wedges (for garnishing)

    How to make Watermelon Mojito?

    1. In a blender puree watermelon pieces , then strain through a fine mesh sieve to extract as much liquid as you can. (We need about 3 oz watermelon juice for a single cocktail).

    2. In a large glass combine mint, simple syrup and lime juice. With the back of a wooden spoon (or you can use a wooden rolling pin) muddle, but don’t break mint leaves. Add ice. Pour in watermelon juice, rum and soda water. Stir to combine.

    3. Serve mojitos garnished with mint springs, lime wedges and a slice of watermelon.

This is also a great pitcher cocktail. Great for parties and gatherings.

Can you make this watermelon mojito recipe sugar free?

Yes! You can sweeten it with liquid Stevia and skip the simple syrup. I’d say 1 tsp Stevia should be perfect for one cocktail.

You can also find Stevia sweetened simple syrups online.

  • 2-3 oz white rum
  • 3 oz watermelon juice
  • 2 oz simple syrup
