It is hot and humid out there. I know summer is nearing its end, but it certainly doesn’t feel like that around here.

All I need these days is a delicious, good quality frozen treat. I’ve been obsessed with frozen desserts this summer. I don’t know if pregnancy had anything to do with this, but I needed to have a frozen dessert every day. Throughout the summer, I made some frozen treats at home and also bought some from the store.

My all time favorite brand right now, which happens to also be dairy and gluten free – So Delicious Dairy Free®. I’ve been buying the Cashew Milk Salted Caramel Cluster flavor for a while, but this time I decided to also try the So Delicious Dairy Free® Coconut Milk Simply Strawberry,which tastes perfect!

I love enjoying these frozen treats on their own, but this time I thought I could use them to make some Strawberry Banana Coconut ice pops. Everything tastes better on a stick, right?

I made pops with the So Delicious Dairy Free® Coconut Milk Simply Strawberry frozen treats, fresh bananas, strawberries and toasted shredded coconut. These Strawberry Banana Coconut ice pops turned into a great mid-afternoon snack for a hot summer day. Super simple to make, with just a few ingredients, popsicle molds and of course you need to be patient and let them freeze.

STRAWBERRY BANANA COCONUT ICE POPS RECIPE

STRAWBERRY BANANA COCONUT ICE POPS RECIPE 12

Ingredients 

  • 1 container So Delicious Dairy Free® Coconut Milk Simply Strawberry, , softened
  • 1 large banana, , diced
  • 8 medium strawberries, , diced
  • 1/2 cup shredded coconut, , toasted

Instructions 

  • In a bowl, combine So Delicious Dairy Free® Coconut Milk Simply Strawberry frozen treat, banana, strawberries and half of the shredded coconut. Stir to combine. Fill ice popsicle molds with the mixture. Top with the remaining shredded coconut. Close lid and insert popsicle sticks. Freeze for at least 4 hours. When ready to remove from the molds, run under hot water for 30 seconds.
