This Skyr tiramisu (No-Bake, Protein-Packed Dessert) is my simple, everyday take on a classic dessert. It is no-bake, creamy, lightly sweet, and tastes surprisingly impressive for how little effort it takes.

  • 2 espresso shots

How to Make Skyr Tiramisu

  • Prepare the espresso
    Brew one espresso shots. Pour part of it into a shallow bowl for soaking the ladyfingers. If it is very strong, dilute slightly with water. Set aside the remaining espresso for the cream.
  • Make the skyr cream
    In a bowl, combine the skyr, remaining espresso shot, vanilla, and chocolate protein powder. Mix until smooth and creamy. The mixture should be thick but spreadable.
  • Soak the ladyfingers
    Quickly dip each ladyfinger into the espresso. Do not over-soak. They should absorb flavor but keep their shape.

  • Assemble the first layer
    Arrange half of the soaked ladyfingers in the bottom of a small glass dish or container.
  • Add the cream
    Spread half of the skyr cream evenly over the ladyfingers.
  • Repeat
    Add the second layer of soaked ladyfingers, then spread the remaining cream on top. Smooth the surface.
  • Chill
    Cover and refrigerate for at least 4 hours. The skyr will release a little liquid as it sets. This is normal.

  • Finish and serve
    Before serving, dust generously with cocoa powder and drizzle with melted chocolate if desired. Slice or scoop and enjoy.

  • For a stronger coffee flavor, do not dilute the espresso
  • Use plain, thick skyr for the best texture
  • Do not oversoak the ladyfingers or the layers will collapse

Why does skyr release liquid in the fridge?
