Low-Carb, Keto Strawberry Fat Bombs make the perfect snack. Loaded with fresh strawberries, cream cheese, butter and a little bit of Swerve sweetener, these snacks are easy to make and keep well in the fridge for up to one month.
Are berries allowed on Keto?
A small amount of berries is totally acceptable in the Ketogenic diet and in combination with cream cheese these strawberry cheesecake fat bombs have turned into my favorite post workout snack.
I also call them “mini desserts”.
What are fat bombs?
With the popularity of the low-carb lifestyle, the phrase “fat bomb” has gotten a new meaning.
No we don’t call a huge slice of chocolate cake a fat bomb, even though it is.
Fat bombs are delicious low-carb, Keto creations, that would be used as a snack, desserts, side or even a meal.
They contain around 90%, are very quick and easy to make and you can make them in various flavors.
The good thing is that they are full of fat, which is important on a Ketogenic diet.
They also don’t contain a lot of protein.
I decided to share a recipe for cream cheese Keto Strawberry Fat Bombs, but I’ll be sharing a chocolate cheesecake fat bomb recipe soon.
With the fresh strawberries I had, that are in season by the way I made these cute mini snacks, that I froze on a silicone flower shaped mold and they look very cute and taste delicious!
What ingredients do you need to make Strawberry Fat Bombs?
- 4 oz cream cheese very soft
- 3 tbsp butter very soft
- 1 cup strawberries chopped
- 3 tbsp powdered erythritol
HOW TO MAKE STRAWBERRY FAT BOMBS?
I softened the cream cheese and butter at room temperature, then added mashed fresh strawberries and sweetener.
The mixture was quite chunky, which it totally fine, but I wanted it smoother, so I placed it in my food processor and pulsed a few times.
This made it creamy and smooth.
Don’t over process the fat bombs mixture, as this will change its texture and make it more runny, which we don’t want.
Pipe or spoon the mixture into a silicone mold or ice cube tray and freeze for at least two hours.
I’ve personally found that the silicone ice cube trays or candy molds work best for me and ensure easy removal.
Then remove the cheesecake bombs from the mold, transfer to an air-tight, freezer safe container and keep frozen for up to one month.
