Father’s Day is around the corner.
I always think of barbecue and fruity desserts, when I think of this amazing summer holiday.
Grilling season is one of my favorite times of the year, filled with endless cooking possibilities and summer fun.
Grilled meat, fun cocktails, sides made with seasonal ingredients and summer desserts.
I’m very excited to share with you my experience with a grocery store that I recently visited and it has quickly turned into one of my favorite places to shop.
It is called The Fresh Market and I’m lucky to have one close to where I live.
It is the best place to get my grilling essentials. Shopping there was pleasant, effortless and fun.

The Fresh Market is a specialty grocer known for providing a carefully selected products and specialty foods with outstanding quality and the excellent ingredients.
Since this is the second Father’s Day for my husband, I wanted to make something he will love.
And yes, we celebrated it earlier, this past weekend, but this way I can share with you some cooking ideas and inspiration.
Don’t worry, we are going to celebrate once again this weekend.
How to make grilled pineapple?
The recipe I’m sharing with you today is for Grilled Pineapple, topped with lemon mascarpone whipped cream and dusted with cinnamon.
Pineapple is not a very traditional grilling item, but makes a great, seasonal, barbecue-style dessert, that is caramelized on the outside, juicy on the inside and topped with decadent mascarpone topping.
It goes well with any kind of grilled meat and veggies.
The best part- it takes only 15 minutes to make, isn’t that awesome?
And all you need is a pineapple, some butter to brush it with, before grilling, mascarpone cheese, heavy cream, sweetener and lemon zest (optional).
I also dusted the whipped cream with cinnamon, but this is totally optional as well.
I also got a bottle of Rose from The Fresh Market, that paired very well with the rest of our meal.
For the main dish we have Ultimate Carne Asada Steak Skewers, of course from The Fresh Market.
I got them from the meat/seafood section there.
They come on a metal skewer, ready to be grilled, perfectly seasoned, with slices of peppers and onion between the meat.
This was seriously the best beef skewer I’ve ever tried.
And if you have been following me for a while, you know that I love skewers (kebabs), I’ve tried a lot of different skewers, made with different kinds of meat and seasonings and I’ve shared some skewer recipes.

I can’t wait to go back and get some more.
While there, I also got some Maple Bacon Trout Planks to make on the grill at a different day.
This fish was so tender and flavorful!
As a side dish, I made my Grilled Corn On The Cob With Garlic Butter.

It is one of my favorite, quick and easy summer grilling sides.
I also made a green salad, using red leaf lettuce from the produce section.
It was so fresh and delicious!
I also added some tomatoes, cucumbers, onions, avocado and seasoned it with salt, black pepper, olive oil and balsamic vinegar.
I also got some olives and other antipasto essentials from their olive bar.
They seriously had some olives I had never tried.
And I love to get fresh flowers almost every week, to add to my dining room table, they make my house look nice and definitely make me feel happy!
Our Father’s Day Menu is fresh, simple to make and full of flavor.
I literally had to spend the most time on the dessert.
Everything else took like 10 minutes to prepare and put on the table.
Salads are my strength, so I made it in under 2 minutes, then the grilled corn takes a minute to prep and put on the grill.
The beef skewers were ready to grill and only took like 10 minutes to be ready.
You also get a label with instructions on how to cook them.
I grilled the pineapple first, it takes 3-4 minutes per side on medium-high heat, then grilled the meat and corn, so the meat smell doesn’t transfer to the dessert.
I wish I can have a meal like this every single day! It was fun making and of course enjoying it.
To make the Grilled Pineapple, I peeled and sliced it into 1/2-inch rounds.
Then I brushed it with melted butter and grilled it for 3-4 minutes per side, until golden.
I’ve made mascarpone cream many times and shared the recipe with you, but this time I used different sweetener.
You can use powdered sugar instead.
Just refer to the recipe notes.

Grilled Pineapple Recipe
Ingredients
- 8 slices pineapple, 1/2-inch thick rounds
- 2 tbsp butter, melted
- 8 oz mascarpone cheese, at room temperature
- 1/2 cup thick heavy cream
- 2 tbsp powdered erythritol or powdered sugar
- 1/2 tsp lemon zest
- 1/4 tsp cinnamon, optional
Instructions
- Preheat a gas grill to medium heat (400-450F). Clean the grates.
- Brush pineapple slices with melted butter. Place pineapple on the grill and grill for 4 minutes on one side, until you get golden brown grill marks and the pineapple can be easily flipped around. Grill for about 4 minutes on the other side. Transfer to a plate.
- For the mascarpone whipped cream – beat mascarpone and powdered sweetener with an electric mixer for 2 minutes. Slowly add the heavy cream, beating on low speed. Increase the speed and beat for 30-60 seconds, until thick. Beat in the lemon zest. Add cinnamon (optional)
- Serve pineapple slices with a scoop of mascarpone whipped cream. Dust the top with cinnamon (optional).
