Keto Mug Cake With coconut flour
Initially I really wanted to make this chocolate Keto mug cake with almond flour, but no matter what I did the cake was too dense and dry. Ingredients used are very basic for low-carb lifestyle – almond flour, sweetener, coconut oil, cocoa powder, egg and milk.

Another important thing here was I wanted to test the recipe in both the microwave and the oven. A lot of my readers do not use a microwave (for various reasons) and were interested in a Keto mug cake that can bake in the oven, of course for how long and at what temperature is a big deal, as these mini cakes can overcook quickly. We want the consistency of a soft baked, cake, with soft middle (almost like a lava cake), because this is what a good mug cake looks like. Overly dry and dense cakes are not as pleasant to consume.
What ingredients do you need to make these Keto chocolate mug cakes?
- egg
- sweetener – I used erythritol
- vanilla extract (optional)
- almond milk or another low-carb, non-dairy milk
- coconut flour
- cocoa powder
- baking powder
- salt
- coconut oil (melted butter can be substituted, but the cake is more moist with coconut oil)
- sugar-free dark chocolate chips (optional)
Is cocoa powder Keto friendly?
As long as you use good quality, unsweetened cocoa powder, the answer is yes, it is Keto friendly and could be used in many low-carb recipes.
What is a Keto friendly chocolate?
You may already know that you can have certain types of chocolate when on Keto. My suggestion is to be cautious with chocolate, because even Stevia sweetened chocolates contain carbs, that can add to your daily intake.
Look for high-cacao dark chocolate, that is either sweetened with Stevia, erythritol or chicory root. These chocolates usually have a great fat and fiber content. Most milk chocolates, even when made with dairy-free milk and naturally sweetened have higher carb count than dark chocolates.
Some good options are : Lilly’s Dark Chocolate Bar, Trader Joe’s Stevia Sweetened Chocolate Bar, Endangered Species 88% Dark Chocolate and Lindt 90% Dark Chocolate (a little too dark for me).
There are certain types of sugar-free baking dark chocolates, that can be used in low-carb recipes. You can get them from brands like Ghirardelli, Baker’s or Thrive Market Brand.
How to make a Keto chocolate cake in a mug?
- Grease a ramekin (I use 14 oz ramekins) with coconut oil or butter spray.
- If you are baking in the oven, preheat oven to 2350 F.
- In a bowl whisk together the egg, almond milk, salt, sweetener and vanilla.
- Add in the sifter cocoa powder, baking powder and coconut flour. Stir to combine.
- Add the melted coconut oil and stir to incorporate.
- Chocolate chips are optional – you can either stir them in the batter or just add them on top.
- Microwave on high for 60-70 seconds, until the edges are set, but the middle of the cake is still soft. Or bake in the oven at 350 F for 12-15 minutes until the edges ate baked and the middle is still a little soft.
- Let the cake cool for 5 min and serve. Store in the fridge for up to 3 days.

Hi, isn’t 2350 F a bit high? I am in Germany and use Celsius. Should I choose 235F or 350F? Thank you so much!
