This simple and fun Easter Bunny Cake is a recipe straight from my childhood. Growing up in Bulgaria, we didn’t always have access to store-bought decorations or Western-style cake kits, so we got creative with what we had. This cake is all about celebrating spring, spending time with kids, and making something joyful from scratch.

Made with a light, moist yellow cake and topped with a fluffy cream cheese frosting, it’s the perfect Easter dessert to decorate with berries, candy, or even fresh flowers. No special tools required—just a round cake pan and a bit of imagination!

Ingredients

Yellow Cake (for one 9-inch round bunny face)

  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup vegetable oil
  • 1 cup milk
  • 1/4 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 3 tablespoons baking powder

Cream Cheese Frosting

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 3.5 to 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons milk, if needed (for spreading consistency)

Optional Decorations

  • Fresh berries (raspberries, blueberries, sliced strawberries)
  • Shredded coconut or crushed nuts
  • Candy (chocolate eggs, jellybeans, marshmallows)
  • Fruit leather or licorice for whiskers

Instructions

Step 1: Bake the Cake

  1. Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, beat the eggs and sugar until pale and fluffy (about 2 minutes).
  3. Add the vanilla, oil, and milk. Mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until smooth.
  6. Divide the batter evenly between the two prepared pans.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 2: Make the Frosting

  1. In a mixing bowl, beat the cream cheese and butter until smooth and fluffy.
  2. Gradually add powdered sugar and vanilla extract. Beat until well combined.
  3. If the frosting is too thick, add 1 tablespoon of milk at a time until desired consistency is reached.

Step 3: Assemble the Bunny Cake

  1. Use one round cake for the bunny’s face.
  2. Cut the second round cake into two equal ear shapes and a bow tie (see video for reference).
  3. Arrange the pieces on a large platter or tray to form a bunny shape.
  4. Spread frosting evenly over the entire cake.
  5. Decorate with berries, candy, nuts, coconut, or anything you like. Get creative with the face!
