Chocolate Banana Muffins

Ingredients 

  • 1 cup mashed ripe bananas, (2 medium or 3 small bananas)
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp unsweetened cocoa powder
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 2/3 cups flour
  • 1/4 cup chocolate chips

Instructions 

  • Preheat oven to 350F (175C)
  • You can use electric mixer or mix ingredients in a bowl by hand. In a bowl mash bananas with a fork. Add vanilla and the egg and mix well. Add oil and milk and stir to combine. Add sugar and stir again.
  • Add cocoa powder and mix until it is completely incorporated. Ad salt, baking soda and baking powder. Add flour. Mix just until combined.
  • Pour batter into paper lined muffin cups, about 3/4 full. Sprinkle with chocolate chips. Bake for 18-20 minutes on 350F (175C) until toothpick inserted comes out clean and muffin tops appear baked.
  • Remove from oven and let them sit in muffin tin for 5-7 minutes, then remove them and set on a baking rack. Serve at room temperature.
