This is the recipe I reach for when the summer zucchini is coming in faster than I can use it and I need dinner on the table without a second thought. Unlike roasted potatoes with zucchini, everything here cooks in one skillet, it’s mostly hands-off, and it works as a side or a light meal.

I lean low carb most nights, but my kids need the carbs โ€” so when the small new potatoes show up at the market in late spring and early summer, thin-skinned and sweet, this is how I cook them.

How to Make Zucchini and Potatoes

The method is simple: brown the potatoes first, then add the zucchini and garlic to finish โ€” and season only at the end. Keep the heat up and resist the urge to stir too often, since color comes from contact with the pan.

  • Dice 1 lb potatoes and 2 zucchini into roughly ยฝ-inch cubes, keeping them about the same size so they finish together. Rinse the diced potatoes under cold water to wash off surface starch, then pat them very dry โ€” wet potatoes steam and stick instead of browning.
  • Heat 3 tablespoons olive oil in a wide skillet over medium-high. Add the potatoes (no salt yet) and cook 8โ€“10 minutes, stirring occasionally, until they soften slightly and the edges turn golden.
  • Add the zucchini and cook 6โ€“8 minutes, until it’s tender and both vegetables are lightly browned. Times can vary, so go by color and feel: the potatoes should be fully cooked through.
  • Add 2โ€“3 garlic cloves โ€” smashed, minced, or roughly chopped โ€” about 2 minutes before the zucchini is done, so it turns fragrant without burning or overcooking.

Tips

  • Salt only at the end. Salt draws water out of zucchini, so seasoning early is what makes it mushy โ€” wait until everything is browned and cooked through.
  • Give the potatoes the full head start. They need 8โ€“10 minutes alone before the zucchini goes in, or you’ll end up with mushy zucchini and crunchy potato.
  • Make sure the potatoes are actually cooked through before you call it done. They take the longest, and a hot golden edge can hide a firm center โ€” press a cube to check.
  • Don’t crowd the pan. If everything is piled on top of itself it steams instead of browns; use your widest skillet so the cubes sit in a single layer.
  • Choose smaller zucchini when you can. Larger ones hold more water and seeds, so they go soft faster โ€” smaller, firmer zucchini brown better.
  • Stir less than you think. Letting the cubes sit undisturbed for a couple of minutes at a time is what builds the golden edges.
  • Make it ahead. It keeps 3 days in the fridge and reheats in a hot skillet, so I cook a double batch when I want easy lunches during the week.

Easy Yogurt-Dill Sauce to Serve With It

A cool, creamy sauce is what takes this from a simple side to something my family fights over.

Stir together about ยฝ cup yogurt with 2 tablespoons mayo, a good squeeze of lemon juice, ยฝ teaspoon garlic powder, and a handful of chopped fresh dill, then season with salt and pepper to taste.

The mayo rounds out the tang of the yogurt and makes it richer than yogurt alone, and the garlic powder keeps it smooth without raw-garlic bite.

Spoon it over the warm vegetables or serve it on the side for dipping โ€” it’s also great the next day, so I make extra.

This is a natural side for anything off the grill or the pan โ€” grilled or pan-seared chicken, a steak, or a fish fillet.

The soft, garlicky vegetables balance richer mains without competing.

For an easy sauce, stir together yogurt with grated garlic, fresh dill, and a squeeze of lemon and spoon it over the top โ€” it cools and brightens the whole plate. For a lighter meatless version, top the skillet with a fried or poached egg.
