Winter… Oh Yeah, it is January! New year, new resolutions, goals and projects!While I like to set goals related with work and family, the one thing I’m pretty bad at is keeping a diet! I love the idea of healthy eating, but every time I decide to follow a diet or stay away from certain foods – I just can’t do it. Sorry, I try!

That’s why I did not start the New Year (2015) with a healthy recipe for Yogurt Chia Parfait, but I shared an indulgent one. Don’t worry, there are plenty of light and clean recipes on the way.

Greek yogurt – yogurt has always been part of my diet. And I used to eat a lot of it as a child. And not just yogurt, but I only buy Greek yogurt. Probably because I was born in Bulgaria, where yogurt is a staple food. Bulgarian yogurt is similar to Greek, just not as thick and is also has a slightly sour taste, but I like both kinds.

Yogurt contains good bacteria, known as probiotics. It is also powerful enough to support your digestive and immune system.

I used to buy a lot of Chobani Greek yogurt in the past, especially when I used to go to work every day, I would bring a small container of yogurt for a snack.

Chobani’s packaging is convenient and I like the small containers for portion control conscious people. I enjoy its rich and creamy texture.

It’s been a while since last time I got a container of flavored yogurt. I usually get a huge container of plain Greek yogurt, which we go through very quickly. We make smoothies, yogurt parfaits and of course I use a lot of Greek yogurt for baking.

I was recently contacted by Chobani (Greek Yogurt) and offered to participate in their #MadeWithChobani project. I had to develop a healthy recipe using their yogurt. As much as I like baking, I knew I was making a smoothie or some king of yogurt parfait.

So I got to work and made these cute, light and clean Light Winter Yogurt Chia Parfaits. For the yogurt part I used Chobani plain mixed with Chobani Vanilla yogurt.

I made a Chia gel, which I mixed with the yogurt. Garnished with some of my favorite winter fruits – pomegranate, kiwi and orange, to enhance the winter flavor.

This chia yogurt parfait turned out great! And healthy, of course.

Chia seeds – powerful mini seeds, considered a “super food”, that provides a boost of energy. And I need some extra energy.

Kiwi – when it isn’t berry season, I always have kiwi fruit in the house. I like it in the winter, due to its higher content of vitamin C, which helps me beat the unpleasant winter colds. It is also very low in calories.

Orange – for extra vitamin C and to add some summer brightness to my winter day.

And pomegranate – love its color and always have some at home.

Pomegranate seeds – i know some people just don’t like to buy the fruit and take the time to release the seeds. But to me it is totally worth it! I love these sweet seeds, packed with fiber, vitamins,minerals and antioxidants.

Simple, healthy and delicious. I just couldn’t want more… Hope you enjoy it!

Light Winter Yogurt Chia Parfait

Light Winter Yogurt Chia Parfait - creamy Greek yogurt base mixed with chia seeds and layered between juicy winter fruits. Loaded with probiotic, fiber and vitamins.

Ingredients 

  • 2 tbsp chia seeds
  • 6 oz water, (or orange juice)
  • 5 oz Chobani Vanilla Greek yogurt
  • 5 oz Chobani Plain Greek yogurt
  • additional sweetener like sugar, , agave nectar or maple syrup
  • 8 tbsp pomegranate seeds
  • 1 kiwi fruit sliced thin
  • 1/4 small orange, , sliced thin

Instructions 

  • TO PREPARE THE YOGURT CHIA PUDDING:In a bowl soak 2 tbsp chia seeds in 6 oz water (or you can use orange juice) for 5-10 minutes. This will produce a nutritious chia gel. Mix chia gel with vanilla and plain yogurt. Add sweetener if needed.
  • Get cups for the parfait ready. (I used champagne glasses).
  • Layer Greek Yogurt Chia pudding in cups with pomegranate seeds and kiwi fruit pieces in between. Add a slice of orange on top.

Notes

For the chia gel - soak chia seeds in 6 oz of water or orange juice. If using orange juice, you'll end up with a yogurt pudding, that has a slight orange flavor.
I mixed Chobani vanilla and plain Greek yogurt, but only plain or vanilla could be used.
Top with fruit of your choice.

  2. I love plain Greek yogurt as well but my kiddos no so much! I’ve found that if I buy it flavored there is more chance they eat it. Really like this recipe… the chia seeds makes it more interesting! Pinned.

I always buy Chobani products not only because they are high quality but because they are produced only about 30 minutes from where I live and employ lots of local people….I’m sure my weekly purchase really helps them, Ha. Anyhow, I love the decadent feel of this parfait, loaded with those awesome probiotics minus the calories. The layers are lovely! I love kiwi too and didn’t realize how much vitamin c they contained. And I didn’t know they were so low in calories. Love them in winter, such a pick-me-up.

    1. I’m so glad you like it Laura! Chibani is great and does contain a good yogurt bacteria, that not all yogurt has. I love kiwi fruit, use it in smoothies, too!
