I was excited to use this amazing product. 

On my recent trip to the grocery store I spotted the Mazola® Corn Oil and I decided to try it.

The first thing I made were these Easy Chicken And Asparagus Foil Packets.

What I like about Mazola is that it  has a smoke point higher than most cooking oils at 450°F . It performs well in a variety of cooking applications, including stir-frying, sautéing, grilling and even baking.

I can’t wait to try it in some baking recipes.

Many home cooks may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor and nutritional value.

Mazola Corn Oil has a neutral taste that won’t negatively impact the taste of ingredients, so it lets the natural flavor of your food stand out. It is the perfect oil for every day cooking.

I’ve been thinking to make some simple, lighter and easy to make every day meals. Foil packets are perfect for every day dishes, both cooked it the oven and on the grill. No mess, no clean up, but still wholesome and delicious food.

Last time I made a foil packet dinner, I used beef, asparagus, seasoning and butter. This time I decided to swap chicken for beef and Mazola Corn Oil for butter for a better for your dish.

This Easy Chicken And Asparagus Foil Packets Recipe turned out perfect! My family loved it!

I did was butterfly cut each chicken breast, so it cooks evenly and faster. Then brushed with a mixture of Mazola Corn Oil, salt, pepper, garlic powder, oregano and lemon juice. Placed on a piece of foil, added the asparagus, top with a lemon slice and wrap tightly.

You can either grill or bake these packets in the oven. I prefer grilling, whenever I can do it, because it takes twice less time and the meat still stays juicy.

I grilled these Easy Chicken And Asparagus Foil Packets this time, since the weather wasn’t too cold, but if it was I would have cooked them in the oven.

The use of Mazola Cooking Oil in this recipe let the natural flavors of the chicken and asparagus stand out and turned them into a great, effortless, better for you family meal!

Easy Chicken And Asparagus Foil Packets Recipe

Easy Chicken And Asparagus Foil Packets Recipe – quick and easy to prepare, light and delicious, nutritious meal. Minimal prep work, perfect for busy families.

Ingredients 

  • 4 4oz chicken breasts, butterfly cut
  • 16 oz asparagus
  • 1/2 cup Mazola® Corn Oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley, optional
  • 4 12×12 pieces of aluminum foil

Instructions 

  • Preheat gas grill to medium-high heat (450 F) or an oven to 425 F.
  • Butterfly cut the chicken breasts, lightly pound to thin them. 
  • In a bowl, combine the Mazola® Corn Oil, salt, pepper, oregano, garlic powder and lemon juice.
  • Place one chicken breast and 1/4 of the asparagus on a piece of foil and brush with the oil/ spice mixture. Wrap the packets to close. Repeat with the remaining chicken.
  • Grill the foil packets for 10 minutes per side, turning once (20 minutes total) or bake in the oven for 40-45 minutes, until chicken is fully cooked. Serve immediately. Top with parsley (optional).

  1. Yummy recipe! I EVOO instead because of the health benefits it offers over corn oil. The corn oil study you quote is a bit misleading.
