The Best Keto Cookies – crunchy and sweet, made with nut butter, chocolate chips, coconut and walnuts (or pecans).

Chewy, crunchy, nutty and sweet cookies, that are naturally gluten and sugar free and taste delicious. Chocolate is added to complete their wonderful taste.

These Keto cookies can be made in advance and enjoyed as a snack during the week. Crunchy nuts, sugar free chocolate and shredded coconut – a delicious combination of wholesome, low carb ingredients for a healthy sweet treat.

Sweets on Keto diet

The great news is that yes, you can have some amazing sweet treats while on the Keto diet and you can easily make them yourself.

From mousses to cheesecakes, layer cakes, flourless cakes, cookies and bars, there are so many different options. You won’t miss real white and brown cane sugar and the extra carbs, I promise you.

Ingredients to make low carb cookies with nuts:


  • Nut butter – I used peanut butter, but almond butter can be used



  • Low carb sweetener – you can use either confectioners or granulated sweetener. I used powdered erythritol i today’s recipe.



  • Baking powder – since there is no flour or even nut flour, we need a little but of leavening agent in the cookie dough.



  • Vanilla extract



  • Shredded coconutย 



  • Egg to bind the dough together



  • Cocoa powder



  • Chocolate chips – I used Lilly’s low carb sugar fre chocolate chips



  • Pecans or Walnuts – the lower the carbs the better


How to make the best Keto cookies?



  1. Preheat oven to 350 F. Line a baking sheet with parchment paper.





  2. In a bowl combine the nut butter, sweetener, baking powder, vanilla, egg, coconut and cocoa powder. Stir to incorporate.


    Addย  the chocolate chips and nuts, stir to combine.





  3. Bake for 14 minutes, then cool on the baking sheet for 10 minutes, before consuming.

What nuts to use in Keto cookies?

Ideally use nuts with the lowest carb content like pecans.

Macadamia nuts, Brazil Nuts, Hazelnuts and Walnuts are relatively low in calories and could be used in this healthy cookie recipe. Hazelnuts are ny favorite, but today I used walnuts, because this is what I had.

I’d personally stay away from pistachios and almonds.

There is no nut flour in these cookies.

Keto Cookies Recipe

Ingredients 

  • 1/2 cup peanut butter
  • 1/4 cups low-carb sweetener
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • 1/4 cup coconut
  • 1 egg
  • 2 tsp cocoa powder
  • 1/4 cup chocolate chips
  • 1/4 cup chopped walnuts or pecans

Instructions 

  • Preheat oven to 350 F. Line a baking sheet with parchment paper.
  • In a bowl combine the nut butter, sweetener, baking powder, vanilla, egg, coconut and cocoa powder. Stir to incorporate. Add in the chocolate chips and nuts, stir to combine.
  • Bake for 12-14 minutes, then cool on the baking sheet for 10 minutes, before consuming.

  1. Be careful with Brazil nuts, they contain selenium and too many (3 nuts or more) per day can be toxic, cause selenium poisoning.
