Hi everyone!
Today’s recipe is for a tomato cucumber quinoa salad with the flavors of traditional Bulgarian salad. It can be put together quickly and can be served as a meal or side dish. This salad is perfect for the summer, it is light and refreshing.
You’ll need about a half cup of quinoa, that needs to be cooked in advance. You can also add black olives and feta cheese to the salad if you’d like.

Ingredients
- 1/2 cup washed quinoa
- 1 cup water
- 1 tbsp butter
- 4 medium tomatoes cut into small pieces
- 6 small persian cucumbers
- 1/2 red onion diced
- 2 tbsp fresh parsley
- juice from 1/2 lemon
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- optional: you can add dried oregano, , black olives and feta cheese to the salad
Instructions
- In a saucepan combine butter, water and quinoa and bring o a boil. Then reduce heat to low and cover.
- Cook quinoa until water is absorbed, or about 20 minutes. Then fluff quinoa with a fork. Let it cool to a room temperature.
- In a bowl combine quinoa, tomatoes, cucumbers, red onion, parsley and stir to combine.
- Add salt, black pepper, olive oil and lemon juice and stir again.
