I’ve talked about homemade snacks on the blog many times. And today I’m very excited to share this Puffed Millet Chocolate Almond Clusters Recipe with you. So simple to make, with only 5 ingredients ad it takes 20 minutes to make (which includes chilling time).

It is not a secret that I’m obsessed with Blue Diamond’s Whole Natural Almonds and I’ve been snacking on them every day since I got them. Raw almonds are a great source of protein and fiber, low in sugar and rich in vitamin E, magnesium, calcium and potassium. Often times, when I need a quick snack, I grab a handful of almonds and I’m all set.

That’s exactly what these clusters are. Made with Whole Natural Blue Diamond Almonds, puffed millet, chocolate and cranberries, these are perfect for a quick snack or even dessert. You can store them in a zip lock bag at room temperature or in the fridge for about a week.

If you aren’t familiar with puffed millet – it is an all natural, whole grain cereal with no added salt, sugar or artificial ingredients. With its complete protein and fat-free composition,  it has been a staple longer than wheat and rice.

It makes a delicious cereal, but I also use it in granola bars and salads. I used it in this Kale Persimmon Salad and it tasted delicious.

Puffed Millet Chocolate Almond Clusters Recipe

Puffed Millet Chocolate Almond Clusters Recipe - delicious chocolatey, gluten free snack, for active people and chocolate lovers.

Ingredients 

  • 1 1/2 cups semi-sweet chocolate chips, (can use vegan)
  • 1 tbsp coconut oil
  • 1 cup puffed millet cereal
  • 2/3 cup Whole Natural Blue Diamond Almonds
  • 2/3 cup dried fruit of your choice - I used cranberries

Instructions 

  • Line a baking sheet with parchment paper.
  • Melt chocolate chips with coconut oil over a double boiler (use a microwave if it is easier for you, just make sure you don't burn the chocolate).
  • In a bowl combine melted chocolate, almonds, puffed millet and dried fruit. Stir to combine.
  • Using a tablespoon, spoon mixture over parchment paper to create clusters.
  • Chill for at least 10 minutes.
  • Enjoy!
