Chopped Chicken Fritters Recipe -cheesy, juicy, tender, melt in your mouth chicken patties, that are easy to make and perfect for an appetizer or a meal. Kid friendly, full of flavor, these can be served with your favorite dipping sauce (Tzatziki, ketchup, chipotle mayo or honey mustard).
What are chicken fritters?
Chicken patties, made with finely diced chicken breast, mayo, cheese, seasoning, eggs, flour (or almond flour) and cheese. You make a batter out of the ingredients and shape the patties with a tablespoon or small cookie scoop. Cook in oil in a pan on the stove top until golden brown on both sides.
Fritters can also be deep fried or air fried. Some healthier recipes call for baking the fritters, which is a great option, too.
Fritter – is usually made with boneless skinless chunks of chicken breast meat coated in flour, egg mixture, spices and aromatics then fried or pan-fried.
How to make
Ingredients for homemade chopped chicken fritters:
Boneless skinless chicken thighs or chicken breast – chicken fritters are usually made with chicken breast (boneless skinless) chunks because this meat cooks relatively fast and is great for pan cooking (pan frying).
Chicken thighs could be used as well, but cooking time should be adjusted accordingly (increased). When I use chicken thighs in recipes like this, I usually grind or very finely chop them in a food processor, so they turn more into ground chicken and I usually make meatballs with them.
I do not recommend using pre cooked chicken in the recipe.
For seasoning the patties:
You can use just salt, black pepper and garlic powder just as I did, for a classic flavor.
Other options are using Italian Seasoning, adding fresh dill and chives, curry powder, Cajun seasoning or Parmesan cheese (used more for flavor). I also used a little bit of Dijon mustard in the batter to balance the flavors.
Other:
- eggs
- mozzarella cheese
- flour (or almond flour + cornstarch)
- mayonnaise
- oil for frying
To make:
Mix all ingredients together in a bowl and refrigerate for 30 minutes.
Cook about 2 tablespoons of the batter in oil on the stove top for 3-4 minutes per side until golden.
What to serve with?
These cheesy chopped chicken fritters can be served with a side salad or chopped vegetables like cucumbers and carrots.
Adding other vegetables
You have the option of adding some vegetables like finely chopped broccoli, pepper, carrots or corn to the fritter mixture and then cook them following the directions. What a nice way to add more veggies to your diet.
What is the best cooking method for chicken fritters
There are a few cooking methods, that will create juicy fritters, but my preferred one is pan frying. Pan frying in a cast iron skillet cooks them evenly and creates fritters, that are golden on the outside, yet perfectly cooked on the inside.
- Air Fryer – the Air Fryer should be preheated to 350 F for 5 minutes. Spray with cooking spray. Cook for 5-6 minutes per side, turning once, until the internal temperature is 165 F.
- Oven baked – arrange on a baking sheet, covered with parchment paper or Silpat mat. Bake at 425 for 15- 20 minutes, turning once.
- Deep fried – deep fry for 2-3 minutes per side, until golden.
Keto friendly
These chicken patties could definitely be made Keto or low carb “friendly”.
There is a significant amount of flour and you may wonder how is turning these into Keto or even Gluten Free is even possible?
You can use cornstarch instead (for Gluten Free).
But is still has carbs in it. The second (best) option is using almond flour and Xanthan Gum. Almond flour might not be able to absorb the moisture in the batter like cornstarch, but it brings nutty flavor to the patties and works well in the recipe.
For the 1/4 cup of flour, you can substitute 1/4 cup of almond flour + 1 tsp cornstarch + 1 tsp Xanthan Gum.
Dipping sauce
These taste perfect on their own, because of the seasoning and fresh herbs used (if you decide to add dill and chives), but a nice dipping sauce will compliment them very well.
You could serve them with Garlic Aioli, Honey Mustard Dipping Sauce, Tzatziki, Ketchup or Chipotle Mayo. These chopped chicken fritters need a light, but fresh or a little spicy dipping sauce for serving.

Ingredients
- 3 large chicken breasts- about 1 1/2 pounds, finely diced, could use boneless skinless chicken thighs, but need to adjust the cooking time and the final result will be more oily
- 1/4 cup mayonnaise
- 2 large eggs
- 1/4 cup regular flour or 1/4 cup almond flour + 1 tsp cornstarch +1 tsp Xanthan Gum
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 garlic clove, pressed (or 1/8 tsp garlic powder)
- 1 tablespoon freshly chopped dill, completely optional
- 1 cup shredded mozzarella cheese, gouda or cheddar will work, too
- 1/2 tsp Dijon Mustard
- Olive or grape seed oil for cooking
Instructions
- Finely dice the chicken meat.
- In a bowl combine the chicken, eggs. Flour (almond or regular, if using almond, add the cornstarch), mayo, salt, black pepper, garlic, dill (optional), cheese and Dijon Mustard. Stir with a spatula to incorporate.
- Refrigerate for at lest 30 minutes, or up to 1 day.
- Heat 2 tablespoons of cooking oil in a pan oven medium high heat.
- Add a heaping tablespoon of the mixture to the pan and flatten with a spoon. Cook for 3 minutes per side, turning once. Fritters should be golden brown on the outside and cooked for an internal temperature of 165 F on the inside.
- Transfer to a parchment paper lined plate.
- Serve with your favorite sauce (I serve these with garlic yogurt sauce).
