- 6 cups broccoli
- 1/4 cup red onion diced
- 1/2 cup bacon chopped
- 1/4 cup dried cherries OPTIONAL, YES I KNOW THEY CONTAIN A LOT OF CARBS, BUT I CUT THEM INTO SMALL PIECES AND USE VERY LITTLE OF THEM
- 1/4 cup sunflower seeds or nuts Keto friendly nuts
- 2/3 cup mayo
- 2 tbsp yogurt
- 1/2 tsp salt or more to taste
- 1/4 tsp black pepper
- 1 tbsp low-carb sweetener or more to taste
- 1 tbsp lemon juice optional
Cut broccoli into small, bite-sized pieces.Â
Rinse under cold water and drain.
Place in a bowl. Add the bacon, onion, dried fruit, sunflower seeds (or nuts if yip are using any).
In a bowl, combine the mayo, sweetener, salt, pepper, lemon juice and yogurt. Whisk to incorporate.
Pour dressing over the broccoli, stir to evenly cover in dressing. Serve or refrigerate and serve the next day.
Not a fan of sweet broccoli salad dressing? You can leave the sweetener out.
