Ingredients

For the pork chops:

  • 1 1/2 lb Bone-In Pork Chops
  • 4 tbsp olive or vegetable oil divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tsp paprika can use 1/2 tsp paprika and 1/2 tsp smoked paprika

For the green beans:

  • 3 cups green beans
  • salt and pepper to taste

Instructions

  • Preheat oven to 400F.
    Brush the pork chops with oil, reserving 1 tbsp of it for the green beans.
  • In a small bowl, combine salt, pepper, onion powder and paprika. Season the bone-in pork chops with the seasoning. Place on a baking sheet. Add the green beans on the side, drizzle with oil, season with salt and pepper.
  • Bake pork chops and green beans for 15-20 minutes, until the internal temperature of the pork reaches 145F. The green beans should be soft and cooked through. You may need to take out of the oven the green beans first, if they cook faster and continue cooking the pork.
  • Let the pork chops rest for 3 minutes, then serve.

You do not need to turn the chops while cooking, but if you prefer, turn them once half way through.

What type of pork chops to use?

Thick bone-in pork chops (1 to 1.5 inches thick) are best for baking, because they stay juicy and it is more difficult to dry them out during cooking.
Thinner chops (under 1 inch thick) can still be used but they will require a shorter cooking time.

Do you need to marinate the pork chops, prior to baking?

There is no need to marinate the pork chops, but you can coat them in spices and olive oil and let them sit at room temperature for up to 30 minutes or refrigerate overnight. Make sure they are at room temperature, before you start baking them.

What seasonings can I use for bone-in pork chops?

My go to seasonings for baked pork chops include a combination of salt, black pepper, garlic powder, onion powder, paprika, thyme and rosemary.
You can also use a dry rub or a spice mixture of your choice.
Mustard, honey, lemon juice or balsamic vinegar can be used to add more flavor to the pork.

Should I sear the pork chops before baking?

In this particular recipe - there is no need to sear the pork chops. 
You can definitely do so, if you'd like to.
Sear on each side for 2 minutes before transferring to the oven to finish cooking, together with the beans. This step will add a golden crust on the pork chops and enhance the flavors.

Do I need to cover the pork chops while baking?

There is no need to cover them. But if you want to make sure they remain juicy, you can cover with foil for the first 10 minutes of baking and then uncover for the rest of the time.

How do I know, when pork chops are done baking?

The best way to find out is to use an oven thermometer.
The internal temperature should reach 145°F (63°C).
The meat should be slightly pink on the inside, which is considered to be safe to eat.
It should remain juicy inside and golden brown on the outside.
