Balsamic Grilled Vegetables

Easy balsamic grilled vegetables made on a grill pan or in the oven — no grill needed. Colorful, inexpensive, and perfect as a side, main, or meal prep.

Ingredients

  • 1 small cauliflower cut into florets
  • 1 cup cherry tomatoes
  • 2 carrots sliced
  • 1 red onion sliced
  • 1 red bell pepper chopped
  • 1 yellow squash chopped
  • 1 zucchini chopped
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar plus more to finish
  • Salt and pepper to taste
  • Fresh parsley chopped, for serving

Instructions

  • Chop all the vegetables into similar-sized pieces, cutting firmer ones smaller.
  • Toss with olive oil, balsamic vinegar, salt, and pepper.
  • Heat a grill pan over medium-high (or use a sheet pan at 425°F/220°C).
  • Grill in batches, turning, until charred and tender — firm veg first, soft veg last.
  • Finish with more balsamic and chopped fresh parsley.
